I spent the day with Millicent, previously featured in a video where she sold popular Ghanaian street food. She has since moved on to start her own local restaurant popularly known as chop bar in Ghana. She shares with us her recipes, her struggles and the ins and out so far of running her restaurant.

The fish that Millicent's dad is frying is called anchovies(sun dried anchovies). It is used for 'abobi/bobi tadi' (a.k.a. keta school boys)

She needs machines to help her mix.
She needs to get storage and buy in bulk. Thats the key to selling food. Otherwise, the profit margin will be minimal. Pray all goes well for her. Better days ahead my sister

Also, she should focus on making one or two dishes for now, since it’s a small business. That’ll also help her make some profit or at least break even until the business becomes bigger.
Electricity in Ghana isn't stable so buying in bulk is very risky
Maybe she can train a younger person like an internship for reduced pay. She needs more help. I had this same problem in America I was doing everything alone. I wish I was coming to Ghana now I could volunteer for free to learn how to cook more traditional dishes. I make red stew I learned from Nigerians she made it the same way. Her food looks very delicious

Africa is so connected, in Kenya we make something similar to baka baka, its called ugali and its made using corn or what we locally maize flour. Thanks Jasmine for always making us hungry.

I'm a vegan I don't eat any animal products. But if you're going to eat meat what's the difference between cow pig chicken cats and dogs fish they're all living animals, it blows my mind when people freak out about people eating one animal that they consider a pet they're people who have pet pigs who have pet cows who have pet fish. I'm not one to preach about my veganism anymore although I don't think we need animal products to survive if you're going to eat animals why are some off limits.

I am very much impressed. Millicent is a hard working lady, getting up before 3 am to prepare meals to sell . That is the time sleep is sweet and in the past only thieves used to wake up at that time .

She does. If she were to sell any higher people wouldnt buy. Shes selling to a specific target market... this is street food. The prices are the same everywhere. If she went higher people will find somewhere else to go.

Cooking isn’t easy, she needs to make good profit but also because she’s just starting that may be why she isn’t seeing profit.
But she also needs to calculate her expenditure for individual ingredients and then add to that

The restaurant business scene is not easy at all. I had my aunt who gave up after a year and she was even a well-established person previously. My mom struggled with it for years and it's finally picking up after 5 years or so. it's definitely not for the faint hearted, but if she's passionate about it, then Give it your all Milli! Surely your joy will come from there

You can tell she a good clean cook, the way she handles and prepares everything. However I will be avoiding Pinot 🍲 if I ever visit the part of Ghana, where certain tribes use cat meat. 🙂 I find Millicent’s work ethics admirable. Very hard worker. Cooking seems to be her passion.
