Was about to comment to get that mint away from the rest and then you mentioned it. Staying on top of an organic fertilizer has made all the difference on my tomato and bell pepper plants this year.
Put the cucumbers in the back with a trellis so it can climb. They need to climb and they don’t want to sit on the soil. They will start sprouting tendrils that will attach to the other plants if they don’t have anything to climb.🤗

As I know, you can't plant together cucumbers with tomatoes... It won't grow together, they need to be separated.

Love the garden, but the peppers will cross pollinate and cross flavors.
Your plants are too close together. Tomato and pepper plants will get huge if you give them the space to do so. cucumbers will vine, so a trellis would be a good idea. Mint will spread like wildfire, put it in its own planter to keep it contained.
