I need to give this recipe a try to preserve some of our onions. We don't have a roaster, but Im thinking I may be able to use a crock pot instead. Thank you for sharing your mom's recipe!

Hello, Ms. Lippy...I have a question about the pressure canner. I canned for the first time. I canned carrots and I can't help but toot my own horn, I did pretty good. Anyway, I was having a problem with adjusting the temperature. At my elevation I'm the same as yours at 11 with the dial gauge, and as I followed the directions and everything was going real good until I had to start adjusting my temp to stay between 10 to 11 lbs of pressure, I went ALL the way to the lowest setting and my pressure was still going up. It finally stopped at 14lbs of pressure. The question is "Will it hurt my canning process if it doesn't stay at 10 to 11 lbs?", I checked one of the jars of carrots and they are so good. I'm not sick and I want to can more but I'm a little worried about it? ~M.G. XOXO STAY BLESSED!
Ms Melissa, are you sure your weight is 10lbs! I asked this because canners normally come stocked with 15 lbs of pressure, and most should be able to be adjusted by removing a weight. If your not sure what the weight is, then order a weight to the canner your using that is 10lbs of pressure. I feel like that is what’s happening honey. Email me if you need any help at any time. 🌷🌸💕

Yes a crock pot will work; but I’ve made a few more batches without the butter, and boy are they perfect, so keep that in mind❤️
