I have tried this recipe. Cause I don't have a clay pot, I used a roasting tin and cooked it in the oven at 150° C for 2.5 hours. It tasted very good. The flavours come through in the meat. I wonder if the type of bird matter. Here in NYC we have frozen chicken that isn’t that fresh and natural like your chicken; will that hinder the results? Do you thing we should buy organic??
I've done this before.But not like this. Instead, did it without wrapping it in parchment paper. Put it into a large stock pot with heated salt rock then placing the bird breast side down and covering it in the heated salt rock. Pat the bird dry then air dry it by stringing it up on a wire clothes hanger for a few hours or until the skin is dry to the touch. Put your favorite seasonings inside the birdbefore cooking and walla Good stuff!

You can use any pot that you have in your kitchen actually. Clay pot just retains heat a bit better. Have a wonderful weekend! ☺️
