I remember my husband buying it for me one day and I was so pissed because it wasn’t what I wanted and I thought it was weird and fishy but oh my gosh I fell in loooove with it! I am actually trying to learn how to cook a lot of the Japanese dishes I’ve enjoyed there..it’s why I found you. You all help so much when you teach us how to cook and I for one am so appreciative. Honestly sad but true I didn’t know how to make rice before I learned it the Japanese way 🤣😭
Just got back from Japan. Every hotel breakfast, I noticed, Japanese gravitated toward mentaiko. They would usually cut up one sac into thirds. And people ate it over warm rice. It was probably the most popular item for the Japanese in the buffet.
suggestion: 1. work with a tong (instead of chopstick) as you dish the pasta over, twist pasta as you lift the centre to create a heap. 2. to get a lighter sauce, i replace cream with hokkaido or meiji brand milk. 3. also, sometimes i grate pamagiano reggiano (parmesan cheese) into the sauce to add on another layer of umami.
Just made mentaiko! I had to order the packets off amazon. I followed your sauce recipe but I had 1% milk, soy sauce, butter and kewpie mayo so I used that for the sauce and oh my gosh...instantly transported back to Okinawa 🥰

That looks so good! I love mentaiko with sushi rice, but never had the pasta. I'm going to try this recipe. I don't know where I can get chiso/shiso in Maui.

There will be a slight difference with the taste but you can try! And once you did, can you share to me how it taste?
Would it work if I used dried tarako instead of mentaiko? I've been craving for mentaiko so I got one thinking they're the same thing..
