Fun fact you can put the whole bag of spinach in the freezer before it goes off or slimy. No feed to thaw out, put it straight into your dishes and pronto spinach it is 😂

LOL but Let me tell you something ... if I have a bag of spinach rotting in the back of my refrigerator the last thing Id be doing is cooking It... the fact that I am a professional chef really has a lot less to do with it and more so my OCD when it comes to my obsession with cleanliness and organization. ALL of my refrigerators get cleaned out and inventoried every 3 days.. work and home... I won't even go to sleep at night knowing there's a dirty cup in my sink let alone rotting food in my refrigerator .... No No and No .... On a more pleasant note You did good with the spinach dish... I make something very similar and your version looks fantastic 👍🏼
It’s fine for once in awhile. For eating this like, weekly, I would use regular milk instead of heavy cream, and just olive oil. Then put a few tiny pats of butter at the end and blend it in. But you don’t really need it when you’re using the cream cheese- I just like butter. Honestly making a roux with the onions & garlic is better. Then adding milk to the roux- makes it creamy right away & you don’t need to use more butter than what you use for the roux.
