  • Summer Means Thanda Thanda Gola ! Here is the Perfect Recipe for Kala Khatta Syrup which you can make and store upto 2 months in the fridge.
    You can’t not make this one ! It is super refreshing and yummy & will become everyone favourite.
    Using this one recipe you can make endless frozen treats like Granita, Sorbets, Lolly & many more.
    Ingredients-
    300g dark Black grapes/ black Jamun, washed, cleaned and blended into a fine puree
    150g sugar
    Juice of 2 limes
    Black salt, to taste
    Method-
    Heat a pan and cook the pureed grape juice and sugar on a low flame with constant stirring.
    You'll see the colour brightening up and darken eventually.
    At this stage add in the lime juice and salt
    Mix well and cook till the mixture thickens and is done.
    To check for its doneness, run your index finger through the head of the spatula. If it forms a clean line, it's done.
    Remove, cool and pour into a clean bottle.
    You can store this to upto 2 months in the refrigerator.
    To make the kala khatta lollies, take one part syrup and mix in 4 parts water.
    Mix it well and pour into popsicle moulds. Freeze for 4-5 hrs and enjoy!
    To make the ice gola, crush ice and churn it in a mixie.
    Put in a glass, place an icecream stick and compress it to shape into a gola.
    Demould, pour the prepared kala khatta syrup onto it as much as you like and enjoy!!

    Always add lime juice towards the end of cooking
    Cook the grape juice + sugar until one string chashni, do not over cook it. Remember it will thicken as it cools down.
    Store the concentrate in the refrigerator for upto 1 month.
