Buckwheat - the last big family xmas dinner we had, my mother and my aunt made buckwheat cabbage rolls. They were the best ever. Pumpkin dumplings - I use sweet potatoes and usually call them gnocchi. This year is weird for me - my husband is waiting to be fitted for dentures, and there is only so much I am willing to overcook and\or puree. Probably ground turkey in gravy over mashed potatoes. But I love just reading your recipes and planning ahead.

I absolutely love the American and Polish kind of comments here! What we grow up with is what IS, and it’s difficult to love that which is not the norm for holiday meals. My mom made all her thanksgivings from scratch, we never had a "from box" thanksgiving ever. We used to have a sauerkraut salad made from sauerkraut, onion, bell pepper, celery, and pimento with sugar added.
Already planned on the apple cake for Thanksgiving. The photos of some of the dishes you showed brought back memories of holidays at Baci's. She died 30 years ago. I don't remember what we called them, but recognized them fom the photos! Memories are wonderful things. Congratulations on your book.

On Thanksgiving, we do the traditional meal. However, usually a week before or after, we do our own version of Thanksgiving. This year it was early and we did it a few days ago. I smoked the turkey and one of the sides was the wax beans with butter and breadcrumbs. My adult son asked me about the dish (we have it at least a few times a year) and I told him that it was always a favorite that my grandmother made at Christmas and Easter, but I thought she had altered the recipe over the years. I am glad to see that it is extremely close to yours. Watching your channel has shown me that some of the things that we have had over the years are way more traditional than I had thought. My grandfather was among the first in his family born in America, both parents and most of his siblings born in Poland. My Grandmother was I believe second generation born in America. Her mother was Polish, father French/American Indian, however we were raised with the Polish traditions.

My mom was polish and made string beans just like this. Except she would add flour in pan first and toast it. Then add butter and bread crumbs! Then toss in fresh cooked green beans. My favorite! Thanks for sharing these polish dishes.

Some people just don't have the luxury of time so need to resort to short cuts to get the meal done, and not everyone makes green bean casserole. I think Mark was being a little sarcastic in his description of a typical American Thanksgiving... but not everyone is only using Stove Top Stuffing and canned cranberries. Turkey 🦃 for Thanksgiving dinner is a must although the sides are definitely enjoyed more . The next day we make turkey sandwiches with stuffing and cranberry sauce ( po’ boy) and then we enjoy the turkey more. I also make the hunter’s stew for all the holidays which is enjoyed for leftovers as well . So excited that your cook book is coming to fruition and getting it out there for us ! I cannot tell you enough how much I love your channel. My mother is from Opole and I have nothing but wonderful and fond memories of gathering in my grandparents basement eating so many wonderful Polish treats with family, in Milwaukee, WI. My absolute favorite, next to perogi, were kopytkas. I would call them fingers because that is what they looked like when my grandmother would fry them up with butter and onions. I would eat a very healthy sized plate of them every time I would see her. Your channel really helps me carry on those wonderful food traditions with easy to follow recipes and you make it a lot of fun. I absolutely love filling up my home with the smells of the Polish Trio. I even try to learn a little Polish so I can speak it with my mothers cousins as well as in our local Polish deli. First of all Mark your doing great with your polish! I could never get past number 10 for some reason. Honestly I want to make everything you guys said for thanksgiving! But I think we’re doing the polish potato salad, fried red cabbage and now that mark said the potato babka is a great breakfast substitute we’ll have to do that as well. Mark your kaszanka breakfast idea was a huge hit at our house!

In my huge family regardless of the occasion or holiday there will be Cabbage Rolls somewhere on the table or side board. Your video was full of good suggestions and I like the idea of serving Piernik in addition to the assorted fruit pies, pecan pies and pumpkin pies.
What to choose? I can’t decide… but it most likely will be the haluski. and yes, I’m dying to try a version of the buckwheat pierogis! I say “version” because my son and I are vegan, but vegan cheeses are now available in so many flavors. So I’ll let you know how it turns out! 🤗

Hi, my Polish grandma always made duck blood soup with duck and prunes and noodles. I think it was called Chawneena. Sorry unfortunately my mother did not teach us Polish when we were growing up. My cousins and I would sit around the kitchen table floor while my grandma, aunts and my Mom all discussed things none of us children could understand. It was very annoying!! 😂

Here's an idea, instead of a turkey(which I don't really like) do a nice bone -in pork roast. You can use all the other side dishes and they will propably go better with a nice fatty crispy pork rost Mike.
I was soooo suprised that sałatka jarzynowa come to Poland only after The Second World War ! Interesting history , first made up in Moscow by the French Chef for the Tsars . After the 1917 revolution, luxury ingredients like crabs, lobstes were replaced by the......carrots. Ha ha the same colour . Only known in Poland less then 70 years. Read the history its really interesting.
I love yellow string beans in Poland.They don’t have this in USA. I love all kind of soup , goulash, meat,fish, cakes/ delicious moist/, Food is flavorful, organic and tasty. In America food is horrible gmo and nothing compared to Poland.
The grocery stores seldom have fresh yellow string beans, but my farmers market in Ohio does in the summer. You can get canned ones in most grocery stores though called wax beans by Delmonte and store brands.
growing up babka was always hours of peeling and grating potatoes using a square cheese grater that looked like a small metal tennis racquet.. and putting the stuff in the old collander and pushing out the water..ll..
also had another favorite called cabbage potatoes and bacon..lol.. basically Bigos, but simple.. layer bacon, potatoes and cabbage in bot, with salt and pepper, and add some water.. let it cook down.. the bacon keeps the bottom from burning, the lid drops down as the steam gets the cabbage, and I don't think it got stirred even, it just cooked into this delicious mess in a pot.. Found early potatoes like jersey golds made less work..lol..

I make Sauerkraut and Dumplings with our turkey.
My favorite centerpiece is prime rib. Totally Turkeyed out. But ham isn't too bad either. And stuff game hens.

Hi, my Polish grandma always made duck blood soup with duck and prunes and noodles. I think it was called Chawneena. Sorry unfortunately my mother did not teach us Polish when we were growing up. My cousins and I would sit around the kitchen table floor while my grandma, aunts and my Mom all discussed things none of us children could understand. It was very annoying!! 😂

Here's an idea, instead of a turkey(which I don't really like) do a nice bone -in pork roast. You can use all the other side dishes and they will propably go better with a nice fatty crispy pork rost Mike.

Only known in Poland less then 70 years. Read the history its really interesting.

Does Poland have a Thanksgiving day?
I love yellow string beans in Poland.They don’t have this in USA. I love all kind of soup , goulash, meat,fish, cakes/ delicious moist/, Food is flavorful, organic and tasty. In America food is horrible gmo and nothing compared to Poland.
The grocery stores seldom have fresh yellow string beans, but my farmers market in Ohio does in the summer. You can get canned ones in most grocery stores though called wax beans by Delmonte and store brands.
It is difficult to speak and not lose your train of thought, when you have food waiting for you to eat. lol
you need bobka and sour cream
growing up babka was always hours of peeling and grating potatoes using a square cheese grater that looked like a small metal tennis racquet.. and putting the stuff in the old collander and pushing out the water..ll..
also had another favorite called cabbage potatoes and bacon..lol.. basically Bigos, but simple.. layer bacon, potatoes and cabbage in bot, with salt and pepper, and add some water.. let it cook down.. the bacon keeps the bottom from burning, the lid drops down as the steam gets the cabbage, and I don't think it got stirred even, it just cooked into this delicious mess in a pot.. Found early potatoes like jersey golds made less work..lol..
but my wife hates turkey so in my home it is ham and goose or duck, or cornish hens even..
What? We never had dressing out of the box. Never. 100% Americanski.
