As a Swiss person, I love how the Raclette Grill was described as a showstopper. They are really common here and are often seen at local festivals. Traditionally you melt the cutting edge on a half-wheel of cheese by an open fire, but there are also grills that let you do that. But my favourite raclette story happened at uni. Two students sat in the outdoor area of the cafeteria and like the legends they were, casually pulled out a small grill like in the video, put on the cheese, pulled out boiled potatoes, an assortment of sliced meats and a big jar of pickles.
Cheesemonger tools always seem a bit more on the "this is the way its always been done" rather than "this is the most practical way to cut cheese". But still, neat!
I agree. Half the tools are not required. But it's still done. I think it's more of a traditional craft rather than just eating cheese. So these tools do look nice.
The most practical way is the way Kraft and Sargento do it: automation and large-scale assembly line production. Taste and "soul" suffer which is why this way is so awesome, it's more artful.
Why dont you use a dutch cheese knife instead of the machete, is has a handle on both ends of the knife so you dont hurt your hand pushing down. Looks more like a cheesemonger tool to

Salt water fucks up wood extremely fast and a metal utensil would conduct too much heat.
