My father is Cuban Sicilian and my Mom is Panamanian Russian. I made my best friend Gumbo (she is Milanese) . She became confused, angry and then happy when she tired it. She ended up eating most of it "in private". Italians are interesting, difficult and very lovable. ❤

I can see that....married to an Italian here. The problem is that most American food like gumbo has too many ingredients in it for Italian tastes. They are not used to super complex layered flavors as in Cajun, as Italian cuisine is all about simplicity and the fewest best ingredients not gussied up on the plate. It's actually a very difficult and daring cuisine to cook well. Most of my Italian friends hate eating in the US....they think the food is horrible LOL. Vice versa, my American friends have a hard time eating in Italy when they visit because they are used to more garlic, more oil, more spices, more variety. But once your palate gets used to it, Italian regional cuisine is incredible, and if you truly eat like an Italian, it's very healthy.

Butter and parm on pasta is my go-to for when I want a quick cheap meal, when I don't want to cook, when I want something comforting, so many reasons. It's tasty and easy.
My favorite is sweet cherry tomatoes, pasta, and a bit of parmesan 🤤 I'll even eat it cold

My opinion, Pecorino Romano is far superior to Parmesan flavor wise. But I do use Parmesan for white sauces and Pecorino Romano for red sauces. Love your cooking videos!!!! ❤️❤❤

Matteo, my dad was a tipical argentinian wirh italian origin, spoke both spanish and italian as his mother language, even if he (*1935) had been the fourrh generation there.
I was born in germany in the late 70s with a german mother and I always tell germans "if you want to mess up in italy with the italians order capuccino on the afternoom or cut spaggetti for your children." Food is sacred🤷🏽♀️

I think this is Pasta Carbonara--it uses 2/3 Parmigiana Regiano and 1/3 Peccorino Romano--eggs and pasta water--a smidge of Guanciale oil and garnished with Guanciale. And red pepper flakes.
Even though I'm allergic to pork and a vegetarian, I would still try that.

I'm late to this but that really looks like Gricia! it's almost exactly like you made it, just a bit of pasta water to melt the cheese and make everything creamy (no butter!).
Gricia is part of the 4 traditional pasta dishes from Rome.
(mix pepper an cheese and you get Cacio e Pepe, add guanciale to that and you get Gricia, add eggs and you get Carbonara! Now substitute egg and pepper for tomato sauce and chili and you end up with Amatriciana!)
Have you tried cooking the crushed red pepper in the leftover oil? Once someone showed me that, I haven't gone back to adding them at the end of a dish.

Yes Italians are intense about how everyone eats their food. I constantly have to tell my own Italian family to mind their own business when it comes to food. They often have no idea what they're talking about as well sadly.

It seems like a variation of pasta alla gricia, using different cheese and pepper, but basically same flavors.

I made Cacio e Pepe following your recipe it was perfect.
From the ingredients, it seems like it’s carbonara which is traditionally made with egg yolks and parmigiano for the base, that is probably where the butter taste comes from.
Looks like pasta alla gricia. Cacio e pepe with guanciale. Yum
