As the tamarind is very important in kitchen, and this is the perfect season of tamarind harvesting, we made it our content. Tamarind has a unique harvesting method and preservation system. These preserved tamarind can be used more than a year, if stored well. Plucking it by shaking the branches, then collect it, sun-dry, remove the cover, again sun-dry, remove seeds, mixed with salt, made balls finally sun-dried. Then stored well.
Do you know that the tamarind seeds can be edible, just for enjoyment. But it should be roasted in fire until it splutters. It's outer cover must be removed before eating. But too much of eating is not good.

My dear Sudarshan, Very informative indeed. In Tamil Nadu tamarind is used everyday for various dishes especially Tamarind rice, sambhar etc. and is a must ingredient in our food. I now learnt how to store tamarind by mixing with and rolling in salt . Best container is earthern pot. Thanks for showing us the laborious process. We sometimes make chutney too with raw unripe tamarind. Tamarind trees I believe live productive for many years. Thanks again for the pains you have taken.

My native is Sakleshpur, in our coffee estate tamarind trees are there, we don't buy tamarind from shop, same process we do at home..
