For a few of the passenger cars (The SP Daylight ones come to mind), Kato offers a type of "Close Fit" coupler that keep the diaphragms between the cars flush for a realistic look. Do you know if the Amfleets have these as well?
I couldn't seem to find any indications of it online, and after pausing your at 3:06 to have a closer look at the underbody of the amfleets, they don't appear to have the correct mounting points for that type of coupler (it's a very distinctive design, pictures of the mounting method can be found here: katousa.com/N/Daylight/pics/Kbottom.jpg ).
If Dan didn't cover that in the review, it's most likely that Kato did not include that information in the kit. You could try Kato's web site to see if it is advertised. Let us know what you find!
This set is on Amazon for a discount and it's only 140$ so I might get it since from this video it looks like a great set

They can do 8.5 inch radius at rather low speeds.
