  • It's time for mega more lots of Massive Food Preservation and *Big Batch Cooking*! In today's Massive Food Preservation video we're canning over 50 pounds of homegrown pork. We're also big batch cooking two recipes that feed my family of 11 for many dinners and days. One big batch cooking recipe feeds our dinner party of 14, plus gives a few freezer meal dinners for later. The other big batch cooking recipe is a slow cooker dinner using locally grown home-canned ground beef. I hope you enjoy this big batch cooking and massive food preservation video

    I haven’t even watched this video yet but had to pause and thank you for posting. Accidentally read some of the sad news in our world and was feeling overwhelmed until I saw your thumbnail in your robe and turban. You took me right back to center, thank you for being shamelessly you. The world’s news can feel scary but the moon still rises, children are still dancing and Jamerill is still preparing food for her loved ones and talking to tomatoes . With all my heart and utmost sincerity, thank you for bravely sharing yourself with this world.

    Isn’t it amazing what you learn from comments and others in general? I watched a lady cut brownies with a pizza cutter last night and thought, “how am I in my mid forties, been cooking since I was a kid, and never thought to do that?” 😊

      I use a pizza cutter for a lot of things. My son doesn't like the crust on his sandwiches I use the pizza cutter to cut the crust off. Makes it easier plus I can cut closer to the edge too.

    In a subsequent video, Becky from Acre Homestead said she regretted not pealing her tomatoes. Since they are frozen they should be easy to peel as they start thawing. I dehydrate my tomato peels, powder them and then reconstitute for tomato paste.

      I believe Becky said she regretted not straining the tomato sauce when she made ketchup. She said she didn't like the texture in that form, but in just tomato sauce to use in recipes, it was fine. She also removed the seeds and skins when making the recent batches of BBQ sauce. As far as canning the sauce, it doesn't affect the process. You just can it like you would strained sauce. You might try a small batch just to see before doing 350 lbs of something you don't like. :)

    Use the immersion blender on your tomatoes, use garlic and salt and pepper. You could use this as a bae for spaghetti sauce, or chili, or whatever you want !

    Hi Jamerrill, I've been canning my own homegrown food for years now and I have tried soo many different methods for tomatoes and I 100% regret the year I didn't remove the skins!! So I would definitely recommend taking them from the freezer in batches, rinsing the skins off in water and putting them in the roasters whole without skins. It's worth that small step 💕. One other tip is go through your rings and recycle any with rust after each Canning session. Because you don't store the jars with rings you don't need that many. You really only need enough for your 5 canners (max). The glass measuring cup is a great tip, especially with jam cuz you can hang it on the pot...no mess 🥰. You're doing great by way, I've never done mandarins and now I want too!! xo

      There's a little machine people run their tomatoes through to remove the skins and seeds. I've seen hand crank and ones that attached to food mixers, the amount this girl does it may be worth Jemerrill looking into one. I'm always disappointed with myself when I don't take the time to remove the skins too🥰

      I agree. Once you remove them from the freezer, you can remove almost all the skins by running under water. I also like to cut in half and squeeze as much of the seeds out as I can. This depends on the ripeness and variety of tomato, but I use mostly romas so it works well for me. I just don’t like the seeds in my tomato sauce or marinara.

    I found you maybe 8 yr.s ago making Freezer Meals. I loved that you got elbow deep in there and made enough to feed your small village. You had my respect from day one! I really just love your "can do" attitude. And when Momma needs a break she takes one. You make a plan and you do it. I think that that has been very inspirational for us all. But much more than that Jamerrill, you are humble, kind, generous, down to Earth and forever malleable to whatever life has to throw at you. And I truly aspire to be more like you in every way that matters. 💋So back at ya!

    The reason you didn't get the amount of applesauce that you thought you would was because the peeler you used wasted about 1/4 of the apple. I usually applaud the Kitchen Aid products. but either it wasn't set right or it isn't a very efficient attachment. If the same thing happens with the tomatoes, you'll be disappointed with the outcome again. This last year I got the best results from my tomatoes in 50 years of canning because I used a different method. The only thing I wasted (gave to the chickens) was the stem end that I cut out -- and of course, any bruised and bad spots. Then I quartered them all and brought them to a boil in my largest stock pot. (A lot of stirring) Boiled them for 10 minutes, put everything in my Kitchen Aid blender and liquefied peels, seeds and all. Poured them into jars with the right amount some salt and hot water bathed them. Sauce is thick and ready to make BBQ sauce, ketchup, spaghetti sauce, Pizza Sauce or marinara sauce. My work time was cut by 2/3 and the product is wonderful. Plus practically no waste. Try it with some of your 380 pounds.

    I canned my tomatoes like Becky did but pulled the skins off. They come off so easy when they are frozen. I did her onion, garlic tomato sauce and my family absolutely love it!! I loved how easy it was to do!! Can't wait to see your video!! 💖💖💖

    A pinch of baking soda in the sauce cuts the acidity. I also throw in a little sugar.🍝

    My best advice ( coming from someone who raised 9 kids with a huge garden and processed a lot of food from it) the one one piece of equipment that I never regretted investing in was my electric tomato strainer. ( peeled and strained the tomatoes for canning)loved loved loved it! We have retired from all that since our children are all grown but I’ve passed it on to one of my children. They love it.

      Yes!!!!!! I used to hand turn all those tomatoes to juice them like my granny did and then I learned about the electric version and wow made my canning days so much faster!

      I picked up the food attachment for my kitchen aid and it is a game changer. It make canning excess cherry tomatoes worth the hassle.

    I am in my 20s as well and live alone but have been watching you since around the time you moved into the forest house ( maybe 5-6 years now?) so early twenties back then. Went back and watched all your videos since your first one as well at some point. Hope you stay healthy and happy and I can watch your videos for another 9 more years at least!

    Don’t stack jars on top of each other without some sort of buffer (piece of cardboard, or something else) between the jars. It can cause the jar on the bottom to unseal!

      Those jars aren't sealed. They are just freeze dried items. No sealing needed. 😃

      Tasha, I think getting to the age where we have our grandchildren in double-edged. That energy thing. We have our beautiful grandbabies, but not that great energy to do all the things we once did with our children.

    That hutch holds s lot of weight. It's a beautiful view with all the jars of food. My late mother canned delicious stewed tomatoes. I think she would have said " can big batches at a time". That sounds like our hostess.

    I always read the tomato skins can make the sauce bitter. Since they're frozen, the skins should slide off as they thaw. But what I did was buy the Kitchenaid Fruit and Vegetable strainer attachment. It makes quick work of the tomatoes and if you want you can use the leftover skins/seeds to make other things. It's also great for applesauce! Cook the apples with the skins and seeds then process it through the strainer.

    All my Italian grandma's and aunts all canned tomatoes by the ton and they all used a tomato mill to process the tomatoes and remove the peels and seeds. look into getting one. its a wonderful tool to make all types of tomato products and consistency. and some of them are also good for making jams and jellies too. I sent you a little paperback vintage canning book some months back, I always wondered if you received it and if was helpful to you???

    TIP When opening a new case of jars, cut plastic on 3 sides which will leave a flap. Then when storing canned jars in boxes, the flap will cover them and keep dust off. Happy Canning!!

    Momma to 14 here Ive been canning awhile I like to can around 200 qts per year. 150 covers 3 jars of sauce for pasta dish per week then extra. I plant around 150 tomatoes in a hightunnel in zone 4 it produces enough for that plus fresh eating and about 100 qts of salsa which I also use for my base to things like chilli. I also dehydrated some last year to act like a paste to thicken things up. I hope this might help you. Have a blessed day!

    I say 400 quarts of tomato product for your size of family for a year maybe even 500 quarts so you have extra while your doing your new batch

    I have been canning spaghetti sauce with skins and seeds for years. It is by far the easiest way to go! I actually blend them up in my ninja blender so I know how many cups I'm working with, then cook and can!

    Good morning! To add water to my jars, I use my electric hot water pitcher. There is no extra measuring devices needed, and with the water already hot, it's a win. I really enjoy your channel, thank you and Happy Friday!

    Instead of messing with that big jug of vinegar.....I just pour some vinegar in a small bowl and it is so much easier to dip my wet cloth.

    So we have been growing and canning our food for years. We are a family of 4 but we often can together with my mom and sister to make sure we all have enough on our shelves for a year which is a total of 11 people. I would say in tomato products alone (diced tomatoes, tomato sauce, spaghetti sauce, tomato soup, soup bases, tomato juice etc) we easily have 3-400 quarts per year. Last year between the 3 families we grew 750 tomato plants. Hope that helps with numbers.

    TOMATOES - I always core and score then put in zip lock bag if they are going to be in freezer for a while. I find if they stay in the freezer for several months, they taste like a freezer. I do both ways, throw in roaster, cook down, then use stick blender. However stick blender never gets every little bit of peel ground up. This isn't an issue for us. At least once during season I thaw frozen tomatoes, remove skins, then dehydrate the skins. After dehydration, I grind into powder to use in soups, stews and such. Adds a lot of flavor. I did 60 quarts of sauce for 2 people this past summer and we are out. My goal this year is at least 100. Always enjoy your videos, however I don't comment very often! :)

    For tomato’s I basically do what Becky does except as the tomato thaws I slip the skins because I don’t like them in the sauce, some say you can’t taste them. But… I definitely can clearly taste them, they add a pithy flavor I don’t care for. You might want to see if it makes a difference to you and yours

    Jemerill there's another big family Mama RUclipsr Amy maryon I watch you both. And I guess I'm reaching out to you because I'm not real tech-savvy!!! And right now she's going through some you know Heart Hard Times her mom's dying of cancer she's headed with her children to be with her I know she has some other things going on as well that she hasn't totally shared and that's fine that's her business but she's like this wonderful amazing person just full of faith Grace and love and she's done so much for me in my time of sickness without even knowing it she keeps me going every day and strong in my faith and I just wish there was a way to help her like that people know to just play her videos over and over ,this could helper have the income she needs to be with her family right now in their time of need and I just don't know how to orchestrate that and I thought maybe you would know and she's in your lane big family mamas❤ and if you can't that's okay I just feel like the Lord is nagging at me to do something and I'm just a viewer of RUclips world❤

    Just remember to not use aluminum pans to cook down your tomatoes. My dad did that one year when mom was to busy working to can the tomatoes and the jars ended up blowing there tops all over the ceiling. Wow what a mess!!!

    You make me want to can for my little family of 3 😂. I keep talking to my husband about it. I know you throw away the grease from the sausage but I would take the pork juice & cook rice in it… it is so good….. just food for thought.       I can just for the 2 of us. It gives us easy heat and eat meals and better jarred ingredients to cook with. Not only do I preserve out of our large garden canning also allows me to take advantage of a good sale. I cook with a lot of stock. I save my bones and scrap veggies in the freezer till I have enough to make a batch of some type of stock. I then pressure can to make it shelf stable. It is so good for you and it is made from stuff you normally would just throw away.

      We can for our small family of 4. We have a big thornless variety of blackberry bush in our backyard. Our blackberry jams make great Christmas presents. Canning is such a good food preservation skill to grow into.

    Yes that works on the tomato sauce. I had reg tomatoes...roma tomatoes..i cooked them down in the roaster. Used the emersion blender. I added tomato paste to thicken just for my liking. It looks like the spaghetti sauce in the jar. But no spices added. Then you can add it to whatever you need.

    Hey Jamerrill. While ur doing all this canning, I wanted to let u know a thought I have. You might not think so or already know, but canning those small pkgd carrots is awful. I suspect they soak them in a bleach liquid before they're packaged and put in stores. I canned lots last year and they're beautiful in pint jars, but oh my, they-taste-awful, just like bleach and so did everything I put them in. I even tried to can #part of them sweetened. All that to say, use fresh carrots to can them. So good! Wish I could can with you!

      I am not from the US (i live in Spain) but we have here Costco (4 of them in the entire country) and I've seen those baby carrots (i've seen them only in Costco) but i was never intrigued to buy them because i've read some awful things about these carrots, how they peel them. I prefer my normal carrots, with the leaves on. Those are the freshest.

    In my experience, tomatoes that have been frozen slip their skins as they start to defrost. The wait for the tomatoes to start to defrost would probably be a consideration on the massive amount of tomatoes you intend to process. That is an easy way to not have to peel the tomatoes if that is an important option for you. Beats blanching and peeling. So enjoy your videos.

    You are a true inspiration, Jamerrill! We now cook 500 grams of macaroni and cheese at once for 3 people and have left-overs for the next day, for 1. Aldi in Belgium sells a pre-made 4-cheese sauce (you gotta do what you gotta do). And it's a true hit here at home. We put some ham cubes in, because that is how we do mac & cheese in this country. Done. We normally just made enough for dinner, but you have to think ahead. My mom comes from a family of 10 children (she is 77, I'm 50). I grew up with plenty of people around. I am an only child though, but have a large family mentality. LOL!

    I was just curious if you keep a running list of what is in what freezer. How many cans or jars of things you have on hand. I forget what is in my chest freezer if I don't make a list.
    If you do bet that's one heck of a list. Love your vlogs. I go back to your beginning one's. Love the kids being so little and you could safely film them.

    I cook for just 2 of us and we don't eat a lot, I use at least 10-15 cans of tomatoes, 3 cans of paste and at least 5-6 cans of sauce a month.
    When I did can tomatoes, I just blanched, peeled and stuffed them into jars add a tsp salt and water bathed them. Time depends on where you live.

    I use a victorio strainer to make applesauce and tomatoes sauce. I canned several hundred tomatoes sauce each year. I added onions, tomatoes paste, a few chilies, and spices. I'd cook it several hours, then hot pack can. I'd use it as homemade prego and for homemade pizza sauce.

    I do a basic tomato sauce with onion and garlic. It is the jumping off sauce. You can turn it into many many recipes from there. Hubby likes it with chunks of tomatoes so I reserve some and add back in after blending. Many Blessings!

    All the food looked great. My dad always did the canning from what he grew from the garden. Tons of tomatoes, green beans, corn, and okra. I have no clue how to can. Dad would do the canning. Mom did the freezing. Can't wait to see the bathroom update. Thanks for sharing.

    If you thaw your frozen tomatoes in a container (I leave them in the gallon bags I froze them in), they will lose a good deal of water. Which I save to drink because it's delicious. Then I slip the skins off (seeds stay in), crush or blend them, cook to a good consistency, then water bath. Pulling off that water cuts the cooking time quite a bit.

    Frozen tomatoes are so very easy to peel as they thaw. If you thaw them before cooking them you can eliminate most of the skins. See the video from That 1870s homestead.

    Have you thought through canning sloppy Joe sauce. So you can dump the canned meat and the jar of sauce and turn on the crockpot.
    I also think you can run the tomato scraps, seeds, skins, etc through your freeze drier and make tomato paste powder.

    Walmart has presto pressure canners in store for like $80-$90. It's the model I use. Fits 7 quarts, 10 regular mouth pints, and 8 wide mouth pints. Super cost efficient, and I've used mine for years.

    One more tip... Kneady Homestead showed dehydrating tomato skins and turning them into tomato powder which is a great flavor enhancer. I've purchased tomato powder but never made it...something on my to do list. Might be super simple with a freeze dryer.

    Canning tomatoes are pretty easy to can. Peel (hot water blanche) prepare as you plan to use and water bath can (if high acid variety). Enjoy!

    In Belgium (Aldi also sells it pre-made) we have this casserole dish called "hachis parmentier". It consists of a layer of ground beef, and a layer of mash. It is very sloppy when served, but *so tasty* and a real comfort food, especially for those people with teeth issues, like say braces or dentures. I keep mentioning it but nobody seems to want to make it. Maybe it's too foreign or just too weird. LOL!

    I’d definitely strain the liquid off those tomatoes after they have cooked in the roasters for a while. Then let them cook some more with your lids off to allow for evaporation, after you use your immersion blender on them. I wouldn’t can them with the “insides” and seeds in in the mixture. While that would give you more volume in the long run the texture won’t be as appealing in something like spaghetti or lasagna. It will make final dishes runny. The seeds and skins won’t be much of a problem but if you put the “insides” in the roasters they’ll liquify a lot during cooking.

    JaMarelle, I cook up my tomatoes with celery, onions,green peppers and whatever seasoning you want. I let it all cool down and put them in double bagged freezer bags. They stack nicely on there sides in the freezer 💕🙏🙏

    I make a tomato soup where I just skin and core the tomatoes and don’t bother with seeds. It’s literally just skinned, cored tomatoes in a crock pot, a couple topped, tailed, and quartered onions, your preferred amount of garlic, seasonings, and enough veggie broth to almost cover the tomatoes. Let it cook down for several hours, then immersion blend. I freeze mine, I don’t can it, but you probably could pressure can it. And everyone I’ve served it to loves it. Even with the seeds.

    get your 4 cup pyrex measuring cup handy, and the 1 cup never fill the 4 c , top off w 1 cup.
    i been canning over 65yrs. if u dont maximize ur tools, ur arms & feet will suffer. maybe not today but in a few years.. ya never know

    You are amazing! I always admire how you get so much done! I love canning tomatoes. I find that it is easy to do when they have been frozen first, but I always core my tomatoes before freezing them. Once they start to thaw, the skins slip right off, and the excess liquid I easily poured off. From there, I like to just can chopped tomatoes. That way, I can use them however I need them later. I usually just use them for chili. Lol. Becky's way is easy, too! I know whatever you decide to do, they will be great, and it will be fun to watch! Blessings! 🥰

    I know I’m too late for tomato sauce tips, but I thought I’d throw this in. The first year I did tomato sauce with the skins and seeds blended in. Maybe it was my less than stellar blender, but there were bits of skin in the sauce, and the seeds made it bitter. I’m anxious to know how yours turns out!

    I freeze a lot of spaghetti sauce.
    I stew the tomatoes down and use an emerson blender to purée the skin and seeds.
    I just want to do it the easiest and fastest way. We don’t mind any skin in the sauce because I think it is just more nutrients and fibre. Good luck with however you decide to do your tomatoes. It will be fun to watch. I can see why you have managed to have a utube channel for 9 years… because you are enjoyable to watch and make my day a little better every time. Hope your day is going well!

    I hav a family of four with adult sons. We use 1-2 quarts a week, so that makes so that makes a minimum of 104 quarts. My first year I was able to can 8 months worth, I was sooo excited! Maybe this year we can do the whole years worth!?!

    Re tomato sauce: I can drink it by the glassful. YES I am Italian. I always make a simple marinara sauce and use it for anything. It makes a statement with anything you use it with. Bon Appetite.

    Coming from a big family we would at least put up 350 quart jars of tomatoes. When doing that many tomatoes wearing gloves is a must or you will end up with acid burns and blisters.

    Most of my days are pj days I get up clean and cook but that's about it depression isn't working for me right now or my other mental issues my anxiety is through the roof but I am going to a concert tomorrow night with my aunt at her church it's a Christian band I'm do excited about that so I am totally making myself get up get dressed up and go to that for sure sooooooooo sooooo excited about it .......this video was amazing I hope to one day be able to do this when I can actually get the stuff and buy the foods and grow some veggies I don't have an area to grow alot and usually things die I am horrible with gardening but my husband does better so if he can keep it alive I can pick it and put it up lol

    The best canned spaghetti sauce recipe I hand found is the Taste of Home one. It calls for 25# of tomatoes. Try it...it is delicious!

    If you have a lot of your kids keeping a tomato garden going, you might get enough tomato sauce. 😂 But for me, I can all my family's (only 5 of us) canned diced tomatoes, salsa, and ketchup (which I also use to make homemade bbq sauce), and our tomatoes with green chilis. I gave up on tomato sauce and tomato paste because I use them less and they take a ton of tomatoes to make a little bit of sauce and barely any paste. I decided I would buy the very little amount of tomato paste I use and the kind of small amount of tomato sauce I use. I can all of our other tomato products. Does that make sense? I was prioritizing which tomato products we use the most.

    I have gone away from peeling my tomatoes for canning and I just use an immersion blender. I do the same with my spaghetti sauce. No seeding or anything!
