If you haven't tried some sourdough Bomboloni (originally called in Rome "Bombe") well, it's time to make up for it. Traditionally, these Roman stuffed donuts are filled with a simple custard cream, but in this recipe, I made a pistachio cream and a chocolate one for pure heaven. Go big or go home, right? They are soft as a pillow, chewy as chewy can be, packed with sourdough flavor, and super-duper stuffed which make them explosive. So get your fav coffee ready, and let's make together this pure heaven bite.

I have to recommend a hand grinder for your Aeropress. Hario has one that’s about $35. At a cafe I used to run we made iced coffee with an aeropress. They were so much better then cold brew.

If you wanted to put them in the fridge overnight to fry in the morning. Do you think after they are cut and before final proof would be the right time?
I would suggest you putting the entire dough in the fridge before being cut and before the final rise. Good luck! :)

What is liquid starter please
Are you using salted or unsalted butter? And you're not making a levain, just using 100g of mature starter?

Instead of deep frying, can it be baked ? Am terrified of oily foods
