It’s so hard to find anyone making 💯 whole wheat. I don’t understand why people use whole wheat if it’s not 💯. I can’t digest white flour and it makes me bloated and makes my face itchy.

Am I correct that the hydration is at around 80%? I am trying to convert your ingredients from cups to grams.
Can you knead this in a mixer with dough hooks instead of the stretch and fold?
