    Colonel Sanders may have taken a trip for some Nashville Hot Chicken, gone south for some Georgia Gold, and even to the final frontier for Zingers....but for Butter Chicken?!?! NOT! Recipe below.
    Instant Pot Butter Chicken - Flo Lum
    1/4 c veg oil to instant pot - Saute mode
    6 cloves minced garlic ( or 2 T container garlic )
    Saute about 1 min.
    Turn Off
    Now turn on Saute mode and then Adjust to Low setting.
    Add 1 can tomato paste.
    Cook 1 min.
    Add spices:
    1 t salt
    1 T paprika
    1 t cumin
    1 t turmeric
    1 t coriander
    2 t garam masala
    Stir 4 mins.
    Turn off
    Cut 1 lb boneless skinless chicken thighs into bite size pieces.
    Add 3/4 cup water to pot. Add chicken and stir.
    Put on lid.
    Select Poultry and adjust time to 5 mins.
    Turn pot Off.
    Manual release.
    Stir pot.
    Select Saute mode.
    Add 1 1/2 c whipping cream
    Stir.
    Heat to bubbling.

    My instant pot arrived today and this was our first recipe. I have 4 kids ranging in age from 13 to 3. I have to date, not been able to cook anything that they all agree on, until now. This butter chicken was delicious. They all loved it. My eldest son, finished by saying “i need to go lie down” he was so full. My eldest daughter said it’s thumbs and feet up! It was so nice. Even my two year old Saint Bernard cleaned her bowel when I gave her the sauce and left over rice. Far, far nicer than any takeaway or restaurant butter chicken we have had and it looks set to become a regular meal for us. Thanks for sharing.

    Great recipe! We made this with two changes: Ghee instead of vegetable oil and chicken broth instead of water. Hey, it came out great, better than other more complicated Indian recipes we've tried. Thank you for the idea and the recipe!

    I used to be so intimidated by Indian cooking. I finally took a class several years ago and I'm not sure why I was so intimidated. Picking up the spices was half the battle. Once you get all the right spices, you can make anything! Enjoy!

      +Katherine Haught Hope you like it. If you're not used to Indian spices, butter chicken is probably the easiest one to try. It's not spicy but it is definitely very flavourful. My kids enjoy it, hope your grandkids will too.

    My son loves this. I measure the spices out into individual containers so I can just toss a container into the pot without measuring each time. I'm lazy. Thank you for a really great recipe. It's on my regular rotation, and my son takes the leftovers to school for lunch.

    My 15 year old son and I made this together last night and it was SO delicious. I had watched the video when it came out but when we started cooking I just had Java Junkie's post open with the recipe and missed out on the part where you aren't supposed to stir after adding the chicken and water. We caught it in time and added a little more water, so as a result we ended up adding more garam masala because the extra water diluted some of the flavor. I did think it was a bit rich with all that cream so next time I might go half and half with cream and chicken broth. But both of us went back for seconds...delicious!

    Butter chicken is the best!
    Re: tomato paste...I fill up ice cube trays (the ones with the lid) with the leftover paste measuring out 1 Tbsp in each cube. Pop the lid on and keep in freezer.
    I tend to use thighs where I can in the IP just so it doesn't get dry.

    I made this tonight for my husband and he loved it! I used coriander seeds instead of coriander powder. I'll definitely grind the seeds in the future, but it was still delicious. Thank you - your videos inspire me to use my instapot more!!

    Ghee (clarified from butter) is used in " Butter Chicken" recipes. Everything else sound good!

    Thanks for this! I have yet to purchase my Instant pot, but it's only a matter of time. Looking forward to some butter chicken! A tip for tomato paste; I cut the can at both ends and push it through, no muss, no waste. You can do this ahead of freezing into one TBSP portions too (which is such a great idea!)

    Made this tonight and it was amazing! One thing is love to see in your recipes though is how many each recipe serves. Sometimes it's just my husband and I and other times I'm cooking for a crowd and I struggle to know if I can half a recipe or if I should double it. Thanks for your amazing recipes and tips!

      I cook for a family of 5 (3 adults & 2 tweens). Sometimes it’s just enough, sometimes I can get enough leftovers for my mom’s lunch and small lunches for the kids. Depends on how hungry everyone is. 😉 Hope that helps.

    I finally tried this recipe and honestly tweaked it a bit. I loved the combination of spices and the flavor it gave the curry. But I wanted a thicker gravy, kinda like what I usually get at the restaurant so I actually half-cooked my chicken with a combination of garlic, ginger, and ghee. This way the water from the chicken didn't dilute my sauce and instead of just plain water like you added, i created a broth using better than buillon.
    Thanks Flo for this easy recipe! :D My favorite indian restaurant closed down a couple months ago but I have been craving some type of indian curry so I decided to make it at home after watching your video over and over again.

    This is another party I joined late! But I’m happy I found it 😁 I only discovered butter chicken recently and it’s exactly what I want in an Indian dish, TASTY, I find that too much heat takes the taste away. My dad used to go to an Indian restaurant and had the hottest of hottest curries, I don’t know how he ever did it! I tried a Madras in a restaurant once, and ordered ice cream after, so that I could hold the spoon to my lips to cool them down 🥵

    I saw other recipes that used butter so I added it. It all tasted pretty well but I tried to make a bit more and it got a bit soupy. Admittedly the flavor wasn't quite as good as I get at an Indian restaurant but it was still good. I made enough for 2 meals for my husband and I so we are going to thicken the rest with a little "wonder flour" and add a few more spices tomorrow.

    Great video. To change it up, you can use coconut milk/cream instead of milk cream to give it a Southern Indian curry taste!

    I’ve used this recipe several times except I substitute the cream with coconut milk because I’m lactose intolerant. Delicious every time although I find I end up adding a bit more salt when it’s ready.

    I just received an Instant Pot as a Christmas gift, so I'm a beginner at this. This recipe was excellent, but in order to get it to taste more like the Butter Chicken at our local Indian restaurant, I added a drop of doTERRA cardamom essential oil! They put in whole cardamom pods.

    Great video Flo and Dude.... and one of my favorite meals, as well....This was one of the first meals I made in my Instant Pot. I used a very different recipe than what you use here (I can't find the recipe I used), but I'm very anxious to try yours, Flo. Thanks for sharing one of my favorites....
    Also enjoyed the seagulls in the background...I always enjoy the sounds in the background...whether it's your son's cello, or seagulls...:)

    I love your videos. I was wondering if you would do a video with a dish were you cook the rice in a dish inside the pot when the main course is cooking underneath it.

      Thanks, Melinda! I have not yet tried. I have done the opposite... tried making rice and steaming a dish of something on top. Can't remember what it was now. Obviously not that memorable since I haven't done it again. ;)

    I'll try this Flo. I usually use a combo of Greek yogurt and coconut milk instead of heavy cream. I always wondered why it was called butter chicken. Even funnier when you know I often make butter. I do like my butter made with cultured cream. Your Butter Chicken coming up. Maybe tonight.

      Thanks, Terry! I think they must use ghee for butter chicken but the few recipes I've found do not so I'm not sure. Maybe these recipes are written for us North Americans so that it's easier for us to find ingredients?

    Hi Flo and dude! This is one of my fav recipes. Just made it again last night. Thank you! Love your videos. They’re funny and the recipes rock! Where did you get that tan cutting board? Looks sturdy and it seems that it doesn’t show scratches.

    Try adding a little ketchup, brown sugar and fenugreek leaves to it. Also substitute the Tomato Paste with tomato sauce.

    Hi Flo, I want to double (perhaps triple this recipe) to feed a large group, and am very new to IP. You had mentioned not needing to double cooking time, but would you double all other ingredients as well (including the chicken)?

    Flo, I’m marinating your adobe chicken right now, but I’m putting your Butter Chicken on my meal plan next after watching this video. Oh my golly, this looks super duper. I hope that all the heavy whipping cream didn’t affect Dude’s tummy. I, too, suffer from lactose intolerance,but weirdly enough sour cream, cottage cheese and buttermilk have no adverse effects on what’s left of my digestive system. I’m eating this no matter what. I’ll drink a full glass of kombucha with the meal. Great job, Flo. You are an incredible cook... jo

    How would you make only vegetables like a mix of broccoli, zucchini, potatoes, carrots and peas. Would you put everything in at once in the water or on the steam rack?

      +Blumanchu I'm assuming this is not in relation to butter chicken. All the veggies you have mentioned require different cook times. Potatoes and carrots require the most time. If you want to cook it all in one pot, I would do them first, then add zucchini, broccoli and peas near the end. I don't steam veggies in the IP because I like my veggies at a specific doneness and find that I don't have as much control in the IP. Hope that is helpful.

      +Pacific Blue I don't know for sure because I have not used the Power Pressure. You'll have to check the psi. The Instant Pot works at 10.2-11.6psi. If your pressure worker is less then you might need to increase the time but I imagine only by a couple of minutes. But you can always just give it a try and see. Add a couple of minutes if you need. That's what I would do. Hope that helps.
