    What type of filter do you use for the "pectin"

    I've seen some taps made of wood where they soak up the inner sap and drain it out. The advantage is that the tap can be shaved off and left inside the tree or re-used each year if you attach a spigot. Any experience with this?

    Is it possible to use pectinase to break down the pectin before boiling?

      Some producers do this. But we're currently in the middle of a chemical analysis, and it turns out the "goo" is not pectin. So, aside from some anecdotal reports, we don't have any reason to think pectinase helps.
