After Deer hunting season I take all the ribs and put them into a very large pot and cook them for about 4 hours. Removing the bones and chopping all the meat up, and then I make the chili. Delicious.
That’s a great idea to dip with the tasty belly. Needs a little prep since I would also like smoke the belly upfront and then use KJ do the chilli as an OTT. So this would be a process taking 6-7 hours in total
Well, I like Texan chilli but I also like beans in my chilli. So, I only use Red Kidney Beans and cook them in the chilli. Dried beans are watered overnight and then cooked in the chilli. Canned beans I just put in the chilli when the chilli is done already, so the beans can soak up flavours for an hour (warm not hot chilli).
Seeds don't make up the spiciness in peppers. The pith which contains capsaicin makes it hot. The seeds can be covered with some capsaicin but it isn't the difference you're making it to be. Look it up.
I love a good chilli and normally I put beans in it but if I make it with chunks of beef instead of minced beef then I tend not to have the beans in. I like th pork belly addition and will for sure try that out next time there is a chilli coming up.

For me, it kind of depends on what kind of chili I’m making that determines whether or not I want to add beans. If it’s for a topping, like on a burger or hot dog, then I don’t like beans. But, if I’m making it as a stand alone meal, then I typically add beans. Usually dark red kidney and pinto beans, but sometimes I’ll use black or white beans, too. It just depends on what I’m in the mood for. When I make a chili with chicken, then almost always use cannellini beans and green chilies, although I will omit the beans if I plan to use the chicken chili to stuff into enchiladas.
I love all styles of chili, I have made dozens of recipes and its really hard to go wrong. But you wanted opinions, so... Most styles could be described not as chile con carne (chilies with meat) but meat and beans with tomatoes and a hint of chilies. You wouldn't call a dish mac and cheese if it was mostly mac and tomatoes with a small grating of cheese in it, would you? I like to use less tomato so instead of a spicy ragu you can really let the chilies shine. If you use plenty of ancho, fresh ones that are still pliable, you won't need to rely on so many other things to round out the sweetness. Then use other fresh and dry chilis to get the flavor and spice you want. Lots of chili peppers, lots of meat, some aromatics, everything else is optional and in small quanities so as to enhance rather than take over the chili. Beans are just filler, but I like them so I put them in depending on my mood. Personally I think a little fresh ground coriander and cumin are a must, and don't sleep on a touch or msg!

When you want to add diced or crushed tomatoes, don't get them from a can. Take one or more cans of whole (plum) tomatoes, pour off the liquid and then use a hand blender ( staaf mixer :) to get to the consistency you like. Reason for this is that now you only use the liquid from inside the tomatoes and not the cooking water added by the factory.

When I make chili on the smoker I make two batches. One with beans and one without. My wife likes the beans but when I add them it becomes a type of taco soup. I like taco soup but when I think chili I am thinking just meat.
Oh my. Not cooking the beans in the chili and serving them on the side would be like kissing your sister, your just not getting the effect you were looking for.🤣
I'm in Texas. I would say using the pork belly as a dipping utensil is genius. I don't even mind the beans.

If you get a chance I recommend using oxtail in chili. It’s phenomenal.

Beans are always good in my chili....Next you might give a go at Cincinnati chili 3, 4, or 5-way style.
