Zongo Recipes || Hausa BEEF Stew for Waakye, Rice, Yam etc.|| Easy and Quickest Recipe

  • Hello my lovely friends and family. Today I bring you the long awaited Zongo Hausa Beef Stew. Trust me it doesn't get better than this.

    Zongo Beef Stew Recipe
    **Ingredients**
    5kg Beef (or whatever quantity you prefer)
    30 - 40 medium size Tomates
    15 - 20 Dried Red Chillies - to your taste
    8 - 10 Medium size Onions
    1 Bulb Garlic
    5 full Root Ginger (Ghana Ginger) 2 large size overseas ginger
    2 small Red Pepper
    2 medium size Green Pepper
    1/2 cup full Root Ginger
    3 Cloves Garlic
    I medium size Onions
    **For Steaming the Beef**
    5 Green Chillies
    6 Cloves of Garlic
    1 medium size onion
    Ginger (the size of the medium size onion used)
    1/2 tbsp Aniseed
    1 tbsp Dried Rosemary
    **Spices**
    1tbsp Curry Powder
    1 tbsp Vegetable Bouillon
    1/2 tbsp Calabash Nutmeg
    1/2 tbsp Aniseed
    1/2 tbsp Ground Cloves
    1 tsp Star Anise
    1/2 tbsp Ground Rosemary
    1/2 tbsp Ground Fennel
    1/2 tbsp Black Pepper
    1 litre of Vegetable Oil

      You are most welcome Joyce. Well, it can be a sword and a shield really. Cos remember it’s more of tomatoes and when you cook tomatoes for long it becomes sweeter and last longer but you can lose the nutrients. When you choose to cook it for less you keep some of the nutrients but then you will miss out on that very sweet and intense flavour. So if you want to enjoy this very delicious stew dea then the way to go is this process. Hope this helps a bit. 🙏🏾🤗

    Thanks for sharing. I havent had Zongo stew in ages.... but with this recipe i will try see if that happens. Also, viewers should know that, measurements are not a thing in the Ghanaian kitchen. Eye Ball and cook, thats all you need. :)

      So because of the amount of time needed to fry this stew, if you don’t add the water, the stew will burn and you will not get the desired brownish Zongo stew colour. I hope this helps.

      Awww, it’s Zongo stew oooo so it doesn’t take make to make koraa. The only thing that could be expensive is the meat esp in this recent economic crisis but you can use chicken, turkey etc. otherwise it’s very cheap to make. Thanks for watching dear🙏🏾

    How do I add the dawadawa to the stew? Do I blend it with the tomatoes?

      You can blend it with the tomatoes but I usually put them in like that just before I add the tomatoes, but then mine is a bit crushed so not so big in size. Hope this helps and thanks for watching 🙏🏾

    I tried this recipe it came out so delicious 😋 but I suffered 🤣🤣I messed up everywhere and I had hard time battling with the splashing tomatoes from the pot on fire 🔥🤣🤣🤣🤣🤣🤣

      Eiii!’n Dhatgirl!!! The splatter dea don’t go there ooo. It’s so delicious but the splatter can be annoying but if you put it on low heat you should be fine and a splatter guard can help. Thanks for trying and the feedback, much appreciated 🙏🏾

      Yes Maame, I’ve not posted that video yet, but I will soon. I’m the meantime after you bake your ingredients you have to cook again it just as normal. So using this recipe as a frame of reference, baking the veggies is in place of boiling them as I did. So following this recipe except you will bake your veggies. I hope I’m making sense.       @@bezalea your cooking methods are very innovative but this in particular isn't "ZONGO STEW" .I'm a 100% zongo muslim woman and this is not how its done.. it may be your recipe for a dish but 1. we never never ever put dawadawa in stew 2.for perfect zongo stew,We dont blend tomatoes, we cut no matter the quantity.. thank you

      Thank you for telling me your background and your experience, I do appreciate it.
      I believe this is your first time of coming across my video/channel and you don’t follow me so you are not aware of my background. I am also a 100% zongo non-muslim girl, born and bread in Mamobi/Nima. I was named after my grand aunt Samiratu Sinare, who is also 100% zongo muslim woman. Growing up, I was champion ‘galavanter’. I’d roam the whole area visit friend after friend and 99% of my friends were 100% zongo muslims and from my experiences with each of them, I find that each one of them, depending on the tribe they are from would cook differently. Mariama would cut lots of tomatoes and onions and add Maggie and dawadawa to her stews and soups. Where as Wasila and Asana added no dawadawa but would cut up less onions and tomatoes for their stew. Zinabu who lived in a mansion, would blend her tomatoes and us dawadawa if available, all for the same zongo stew. Sister Asana cooked Waakye at her house at Mamobi and sold it at Osu. She would send her sisters, who were my friends to the nikanika to blend all the tomatoes and onions and peppers to make her Waakye stew, sometimes, she’d scoop some of the tomatoes to cook her stew for supper. Sister Afuse, Emayor and their mother Berle, would send the kids to blend the tomatoes and onions at the nikanika for their Waakye stew and the stew for sunna/sanla etc. Berle, would add dawadawa to her stews and soups too. Time would not permit me to tell you about other experiences at my grand auntie’s house. So what I’m trying to say is that one can not categorical claim one group of people do things the same. Everyone also have their experiences and I have mine and I share mine not from a vacuum though and if they don’t fit with what you know does not necessarily mean its wrong. i do however try and find other ways to make these recipes easier for my viewers.
