This is one of the better travel food videos about Bulgaria that I have seen (as a local). You did try some of the best things and the places you chose are good. Especially the breakfast one. Good job. Though, some of the dishes are more like a modernized chef version of the classic dishes. Manastirska Magernitsa is the classic but it's the least favorite of mine, it's too touristy, still good quality though.

You can call it just sirene, and the yellow cheese from the region , kashkaval, but the word sirene means all types of cheese, not only Bulgarian brine. For example, Three Cheese Pizza in Bulgarian is called Pizza s tri vida sirene, so if you only use the word sirene it can be confusing.

Sofia was chosen for capital of bulgaria ,because it is in the centre of the balkans and in the 19th century our politicians belived that it will be capital of balkan slavic state and also because it is on a field and good for growing,while our old capital tarnovo,wich was the capital of the second bulg,empire (1187-1396) was on a citadels(there were 3 fortresses on three hills)at that time it was important the citys to be on hills and hard to conquer....sofia is part of bulgaria since 809a.d.when was conquered by our khan krum the dreadfull who took the city because is important for conquering of macedonia wich was populated by bulgars and was a strategic goal for our country,krum was famous for killing two byzantene emperors in one battle -nikiforus genikus and his son stavrakius(died after the battle from wounds) and made a drinking cup out of nikiforus scull,also krum made human sacrifice infront of constantinopol gates in order to terrify the citizens inside
