What I want to figure out is how the human brain and body can be so efficient. There are millions of synapses but they fire in waves, never fully loading the system or bottlenecking the nervous system, or shutting down organs or capabilities (normally), all on a burger and shake.

I remember seeing something a while ago about a project that would fully model atom for atom (or maybe cell for cell or something) an entire rat brain in a computer. And even when they do, that's just to get you to put your time, energy and finances into it, giving them more funding and ability to make their next level of Technology. You should never plug technology into the human brain, nor wear any type of headset that can literally transfer your Consciousness from your body to a digital Avatar, in a digital realm, especially to the point where, if you die in that digital realm, you die in "real" life. But that's what this technology is.
Just like the negative outcomes in Demolition Man, The Matrix, Sword Art Online, etcetera, that's what it will lead to in this gods forsaken world, but definitely worse, because those are fictional worlds that must have happy endings. The concept of AI has been around since Ancient Greece's automatons. They are in various Greek myths, which travelling storytellers were familiar with, so most people in the Middle Ages would have had _some_ framework to understand robotics.
