I'm still a bit unsure where in the cut most of the oils reside. I like to pull my low wines when they hit ~15-10% but a lot of the oils seem to sit in the heads and tails. Just wanted to hear your input on this timing respective to those oils.
Is there a definitive way to know how deep you go into your tails when doing an oily pot distilled white dog with the purpose of going into a barrel? Trying to avoid haze in the finished product. Thanks again Alan
Hello Allen, do I understand correctly, in that by double pot still distilled you are counting the stripping run as 1 of 2 ? My apologies if this seems obvious, just want to make sure I understand what you are saying correctly. Who ever answers this question thank you. 🙏
Yeah. That’s what he’s saying. The stripping run is the first distillation and the spirit run is the second distillation. You can do multiple batches of stripping runs and combine them all, then do a larger volume spirit run which would be the second distillation of all each of those batches.
