    I have made this many, many times. I can tell everyone..."hands down"....this is far better than potato salad & so much better for me. I follow basically the same recipe but I put the hot radishes directly in the base ingredients. I might even add a little pickle juice too. This is what I used to do when making regular potato salad so the "radishes" could absorb all the flavors overnight. It is always better the next day, for sure.

      Carol is right, Adding hot radishes to dressing, helps it absorb the flavor. And yes, pickle juice for sure.

      @@kadenleger please don’t drive yourself crazy .. they’re veg .. eat your veg .. they have enough fat to stop any kind of glucose spike .. im not judging .. just that I’m 55 .. been diabetic for 10 years .. counting every carb and gram of fat is tedious and can make you feel like a failure if you go over … food is not just about macros .. it’s about nutrition and joy … eat a regular sized portion and relax .. they are radishes not potatoes .. ❤️❤️❤️

    One thing I love about your videos is, even if one is not keto, it gives really great ideas for healthier sides. I admit, I do not live a keto lifestyle, but I do try to limit starch and bready carbs where I can and provide my 5 and 3yr olds with good, nourishing foods. Thank you for this delicious looking recipe!

    Love potato salad keto style. I use red radish and daikon. My family loves it and doesn't know the difference.

      Daikon is a excellent choice, and you wouldn't have to worry about the bite.

      I use a mix, too. My family eats it as well. I don't remember whose recipe it was that used daikon, but it works for us.

    Down here in the south, we make TONS of potato salad. But usually only use Dukes mayo and no sour cream. And I just chop up my eggs. I've never mixed the yellow in with the mayo first. I do, however, use a ton of onion, dill, and parsley, and add a smidgen of apple cider vinegar or, even better, pickle juice! I bet crumbled bacon would be bomb in this! I'm gonna have to try this asap.😊

    Hi, Steve- nice video and recipe! Thanks! My friend had a NY deli, and told me the “potatoes “ (in her actual potato salad) the taters went from the pot to a bowl, to which she added red wine vinegar, salt, and onion, stirring before it cooled. This gave a huge flavor, and cooled at her convenience, after which she added the herbed mayo etc. It was ready to sell/ serve by the time it cooled and chilled, rather than overnight. I have always used this method (before keto) with potato and macaroni salads, and will be using it with your excellent ingredients. Thanks again, I know it’s a lot of work! 🤗

      That's a cool idea. I think a person could experiment a lot with different vinegars (red wine, white wine, tarragon vinegar, etc.).

    I make my faux potato salad with cauliflower. Either slightly cooked or just raw. My non keto friends loved it and asked how I made it. Didn’t really like the radishes but I love the cauliflower

    I have a bag of radishes that I really didn’t have a clue what to make with them. I’ve looked at all kinds of recipes but this is the first I’ve seen to make a potato salad with them.     Rewatching in August. Made this but found the radishes retained alot of water. Even after in fridge overnight. But, it really didn’t taste like radishes. Steve is right!!! Hope the rewatch helps your algorithm!! Will watch more videos!!!!! Aloha ❤

    I have made it with cauliflower but not with radishes yet. But let me tell you, with cauliflower it tastes delicious because it does not taste like cauliflower at all. But it has that potato consistency. I will try it with radishes, also.😊

    I'm in the process of making the salad. I put a little bit of turmeric into the cooking water and it turned the radish yellow (I used Daikon radish). I was curious and made a taste test.
    I am still amazed that they taste almost like potato. Not 100% but 99%. The texture is a bit different, but the taste ...

    And yet again I want to thank you for opening a new horizon for me!
    After watching this video, I thought why can't I just try fried radishes, and turned out there are many recipes, even chips. I bought 3 lb, tried one bag of just pan fried, easy and absolutely delicious! It is very interesting how radishes change their taste when cooked.
    I haven't tried your "potato" salad, but I'm sure it is good.

    I made this for dinner to go with the smoked ribs my husband made. Tastes great with one exception. The radishes taste soggy. They are water-logged. I even put them between towels and tried to get more water out. Next time our roast the radishes to see if that helps. Otherwise this is great. Thanks for always giving us great recipes and good things to think about.

    Totally making this for my husbands 62nd birthday! He’d rather have potato salad than cake, and he just got diagnosed with type 2 diabetes. I’m exited to make this!     I've used radishes in pot roast with small amounts of chopped onion and carrot. It's a decent substitute for potato. I'm in the South so only have Duke's in my kitchen and I never use dill - only sweet pickles.

    I’m going to try this with the big green/ white Korean radish. They’re very mild and no radish flavor when cooked. Great potato texture too.

    I love that you repurpose your water. Lol. I do that with all my kitchen liquids and dehumidifier water etc. I turn it into fertilizer. I don't know many people that do that.

    A few options to consider (also how I make southern “faux” tato salad.) Add a bit of yellow mustard. Also, perhaps save the work & boil eggs with the radishes & cross hatch boiled eggs in an egg slicer. An added drizzle of dill salad cube juice is also epic.

    I loooove potato salad. I MISS potato salad.
    I just happen to have 3 bunches of Korean Radishes in my crisper because I'm making Pot Roast tomorrow & the radishes were Buy 2 Get 1 Free.
    I think I know what's happening with the extra bunch now.😊
    I'll have to pare the quantity down, but that's okay... I'm the only one really into potato salad around here (who are these kids I live with , & where did they come from?!😂).

    When I lived in Florida, in the little town of Tarpon Springs, the folks who live there are primarily Greek. They make there homemade Greek salad with potato salad on the bottom. Now I can have it again!

    I have to boil radishes for at least two hours to get them to the point I no longer taste them. Use them in soups, specifically borscht. But for my keto "potato" salad I prefer to use cauliflower.

    I made this and it is "DE-licious!" TY for the recipe! However, the radishes I cooked in water on the stove stayed a bit too wet. I picked those out the next day, cut remaining radishes yet unused into bite-sized pieces and microwaved on high in 15-second increments with only about 1T of water. After 1-1/2 - 2 minutes (didn't track time) they were just right, not mushy or too wet, with a very slight crunch. I liked learning to mash yolks separately first and add ingredients to that. Excellent recipe and technique!

    I never cared for radishes until I learned to cook them. Love that they are low carb for side dishes! My father in law and a friends husband both made the most outstanding potato salad. It took me decades before I learned that both of them chopped in a little bit of raw radish into the mix. Love all the ingredients in your recipe Steve! I will definitely be making it soon!!!

    I made this the other day. I followed it exactly to your recipe. It definitely tastes better after one or two days. What I didn't like was the texture. The radishes weren't soggy or too soft but when you eat them they just had too much water content to them, if you know what I mean. I guess Im used to the dryer and denser texture of potaoes. The taste over all was good. I may not make these again but if I did, I would definitely cut the recipe in half and cut my radishes smaller (like 1/4 inch size) so I dont get so much of that wet radish feel. Thanks for all your videos.

    When I'm trying to get that old Miracle Whip taste( because i don't eat that anymore) I have found that Chosen mayo with some Walden Farm Thousand Island and a dash of Walden Farm Dijon dressing mixed together is almost an exact dupe! I use it for mock potato salad, deviled eggs, etc, whatever you would use Miracle whip with, as well as a really yummy topper( with some herbs) for baked fish almondine😊

    Hi Steve. I made this and loved it. I think I slightly over cooked the radishes as they were just a bit to soft, which makes them watery. But other than that this recipe is fantastic!

    Potatoes are high-oxalate so I've been trying to avoid them as much as possible, but radishes are low-oxalate and this really does look like potato salad. I'm going to try this! :)

    I made this tonight to go with some chicken. I thought it was pretty good. I think I should’ve cooked the radishes a minute or so less as the texture was a bit softer than I like. I bought an extra bag of radishes in case I really loved it and wanted to make it again tomorrow. I couldn’t find the bags at my local supermarket but Aldi sold them in 1 lb bags. I think I paid $1.59 a bag?? Anyway, I loved the celery and egg in the salad.

      I've never been a huge fan of them either. The boiling really takes away all of that peppery bite from them.

    Looks really good....I'll try it! Suggestion: get a bench scraper - it's so much neater and cleaner than using your hands (and gets more of the goods into the food :-) I love mine (I have several) and they are relatively inexpensive. Back to the topic: I have my radishes and most everything else I'll need. Can't wait! PS I have to use yogurt instead of sour cream, as hubby has an allergy to A1 casein....but that shouldn't be a problem! We'll see!

    Okay... so I tried this use of radishes... I had tried it a few years back and I think I did not cook them enough... I like radishes so it did not turn me off .
    But here's the thing - it's all in the sauce ... I had never seen anyone mash the yoke right into the sauce/ dressing... but I think THAT is what makes this take the leap to FAUXTATO salad that tastes like POTATO SALAD! Delish...

    I made faux-tato salad yesterday using radishes and it was great! Thank you so much for this video!     I knew this would be good when you put mustard in the potato salad. Being southern, we put mustard in practically everything. Have not tried making it with sour cream but am willing to give it a go. Looked tasty.

      I highly recommend letting them sit in a colander over night after boiling them. That will make them a lot less moist.

    My mom always started her p. salad dressing with a beaten egg, 1/2 C. canned milk + 1/4 C. cider vinegar cooked gently while whisking until slightly thick & egg safely cooked. ( Sub heavy cream to be keto now.) Then she added mayo, "bread-n-butter" pickle juice, mustard & enough catsup for a peachy color. And always added hot veg. to warm dressing so flavors would meld as it chilled.

    Thanks for this great recipe. After switching to net carbs (more carbs) and not losing weight, I am now doing strict keto - 20 total carbs per day. The scale has begun to trend down again. This will be a most welcome addition as i do miss potato salad and cauliflower just wasn’t doing it for me.

    This recipe looks fabulous, and I've added radishes and fresh dill to my grocery list. I used to work in a restaurant, where I was prep cook (and sometimes line cook). I secretly called the potato salad and coleslaw I made "diabetic's delight". Heavy-duty restaurant-style mayonnaise, lots of frozen chopped hard-boiled eggs, cold unsold baked potatoes from the day before, large scoops of sugar for the slaw, you get the picture... It would sell out on the buffet every week.

    To save yourself a lot of scrubbing, use daikon, white globe, or other large radishes that are mild in flavor, and cook up great!

      Agreed. However, I frequently opt for more readily available ingredients in order to make my recipes more accessible to a wider audience.

    Some videos I saw on this type of fauxtato salad roasted the radishes so they were less squishy and wet

    I have to try this! I have not tried with radishes or cauliflower but since your wife says they don’t taste like radishes in this recipe it’s a must!

    Thanks for the video. I'm finding radishes pretty handy for potato substitute. I just made imposter Zuppa Tuscany , from Olive Garden a few nights ago, using radishes. Radishes got a little soft, but I'll add them later next time. I also made mashed potatoes with radishes and kohlrabi, great stuff!
