  • We are sharing how to make Hawaiian fried chicken, mochiko chicken style! Mochiko flour being the namesake ingredient in this Hawaiian dish is made from mochigome rice which is a sweet glutinous rice traditionally used to make Japanese sweets and pastries.
We're bringing back some of our Hawaiian experiences on this! Shout out to the guys at Mark's Place and Contemporary Flavors Catering on Kauai for introducing me to this!
If you're ever on Kauai check out Mark's Place or if you have an event that needs catering, give Contemporary Flavors catering a call. Chef Mark Oyama and his guys are the best there is!

In LA - City of Gardena Ca there was Harry's Chicken which seems to be somewhat similar to this Hawaiian Fried Chicken recipe that was amazing being sweet and savory. Unfortunately Harry passed away some years back and restaurant closed then the family sold to the Loft Chain but their Hawaiian chicken is not the same or as good. This recipe seems to be similar to Harry's and I will try it out. Thanks for sharing 💯😎👍 😋

Had Harry's Fried Chicken, first time, 40 years ago. The plate lunch was magic. So good.
This does sound like Harry's. Which would make sense. And now I*'m hungry!

I can't wait to eat this! What do you do with the oil afterwards? How do you store it?

Hi Nancy! Please give the recipe a try! We usually keep the fry oil for another go or 2 in those bigger to-go containers. Anything leakproof and foodgrade if you're using plastic. Make sure to allow the oil to cool before storing it. If you're not keeping the oil, make sure to throw it away in the trash and not down the drain as all that oil is no good for pipes. Happy frying!!
