Sous vide is excellent for using the home made ham in a can, Takes longer but the slow and even cooking of sous vide gives excellent results. We do wrap our container in reclaimed bubble wrap and several tea towels over the lid as a half arse insulation. RE: chicken on the bone for canning do you blanch it before canning to expel and blood and guck prior to canning? I was taught this method by my aunt but i have not seen it used in any canning videos i have watched. I do this step even if oven baking or pan frying. Take care, God bless one and all.

You will love sous vide diy sausage then you smoke it. I even like smoking meats for the flavor then finishing sous vide the smokey flavor in the bag is awesome. Keeps it a bit juicer that smoking completely due to the wet low temp.

Thank you so much Sherry!! If you have an instapot some of them have a sous-vide function on them that you can use to do the same thing. I'll share other ways to do it. This method is how they do most of the ones you get at the store so the texture is perfect and it isn't dry. Can't wait to share more 🥰

Hi! I am very interested in making this recipe. Looking at other recipes sous turkey breast, I see they cook for like 2-2:30 hours. Is the one cooked for 6 hours to get the texture of deli meat vs like one u may make for thanksgiving dinner?

You don’t have to rinse the white stuff off btw, one easy option if it bothers you is a wet paper towel. If you’re going to bathe it in water you may consider salting that water

You are very welcome! It lasts a little longer if you store it pre-sliced. Usually we only slice about half of it and then vacuum seal the other half in the freezer. Sliced it would last about a week and a half, unsliced about a week longer. If it looks like it's not going to be eatin around the 2-week mark I slice it up for a yummy soup with veggies. Yes, It can definitely be frozen after cooking it.
You can also btw sousvide without a expensive circulator but in a instant pot.. (one with a sousvide function that is... Most are fairly good nowdays fairly accurate and keep the water temperature well)
How long will the meat stay good for in the fridge? Did you add nitrates. Doesn’t Avova recommend eating with in 3 days? Great video just worried about food storage

I would recommend you to turn the meat by 180 degrees when you have established a planar surface on one side, so the food holder of the machine has a proper surface to grip the piece.

Yes, we smoked it after we sous vide. It was already fully cooked so no need to bring it up to temperature, we are just adding flavor here. Ice bath it when you remove it from the sous vide. Then low temp smoke for 30min. I'll make a video on it next time we do it. Probably in the next few weeks or so.
Hi 👋 thank you! No, just salted it before we put it in the bag. There's no need to brine it before you put it in the bag if you salt it, salt is the only thing that can penetrate meat. Everything else is just surface treatment 😊

Kristin, I have the meat slicer but no sous-vide. How else could I do this? I have crock-pot, air fryer, instant pot, gas oven and toaster oven. I go to pick up my turkey breast on Saturday.
Does your instant pot have a sous vide function? If not the other option is to sear the outside and then wrap it really tightly with some parchment paper and roast it. It won't be as juicy as a sous vide but it will be tasty! Make sure you let it cool all the way through before slicing, I usually keep it in the refrigerator overnight and slice the next day
