      My favorite used to be roast beef, however,I don't dare buy it anymore... Making my own would be great, but if there is a way without having to boil it using that special cooker tool? Thank youuu

      @@lepabrena78 yes, its so expensive now!! That's why we stopped buying it too, and most had ingredients in them that were not good for you. I have a few ways of making the roast beef so I'll make a special video just for it 💕

    Sous vide is excellent for using the home made ham in a can, Takes longer but the slow and even cooking of sous vide gives excellent results. We do wrap our container in reclaimed bubble wrap and several tea towels over the lid as a half arse insulation.
    RE: chicken on the bone for canning do you blanch it before canning to expel and blood and guck prior to canning? I was taught this method by my aunt but i have not seen it used in any canning videos i have watched. I do this step even if oven baking or pan frying.

    Thank you for posting this video. I've never tried this, so I have some questions. You started out with a store bought turkey breast? Just making sure I fully understand. The sous vide is cooking it? So I don't have to smoke or put the crust on? Does this make the "oven roasted" you buy at the deli? How long does the "uncut, cooked" breast last in fridge? You said you make them every two weeks. Is this after slicing? Usually deli meat only lasts 3-4 days.

    How long will the meat stay good for in the fridge? Did you add nitrates. Doesn’t Avova recommend eating with in 3 days? Great video just worried about food storage

    I just stumbled upon this channel as i got a meat slicer primarily for homemade bacon. I'm a sucker for cold cuts, but just entering the realm of healthy diy style. I have so many questions and would love to learn more of what you've tried! Really looking forward to your future deli meat posts. I love smoking meats with all types of wood, and curious to learn other methods to shape/loaf/fuse/bind meats when using other cooking methods?       You will love sous vide diy sausage then you smoke it. I even like smoking meats for the flavor then finishing sous vide the smokey flavor in the bag is awesome. Keeps it a bit juicer that smoking completely due to the wet low temp.

    You don’t have to rinse the white stuff off btw, one easy option if it bothers you is a wet paper towel. If you’re going to bathe it in water you may consider salting that water

      Thank you so much Sherry!! If you have an instapot some of them have a sous-vide function on them that you can use to do the same thing. I'll share other ways to do it. This method is how they do most of the ones you get at the store so the texture is perfect and it isn't dry. Can't wait to share more 🥰

    For smoked did you smoke it after sous vide? If yes can you share more detail please? Or directly smoke upto 165?

      Yes, we smoked it after we sous vide. It was already fully cooked so no need to bring it up to temperature, we are just adding flavor here. Ice bath it when you remove it from the sous vide. Then low temp smoke for 30min. I'll make a video on it next time we do it. Probably in the next few weeks or so.

    I would recommend you to turn the meat by 180 degrees when you have established a planar surface on one side, so the food holder of the machine has a proper surface to grip the piece.

    Thank you for the video. How long once sliced will this last in the fridge? Unsliced? And also can this be vacuum sealed and frozen if needed after cooking it? Thank you

      You are very welcome! It lasts a little longer if you store it pre-sliced. Usually we only slice about half of it and then vacuum seal the other half in the freezer. Sliced it would last about a week and a half, unsliced about a week longer. If it looks like it's not going to be eatin around the 2-week mark I slice it up for a yummy soup with veggies.
      Yes, It can definitely be frozen after cooking it.

    Hi! I am very interested in making this recipe. Looking at other recipes sous turkey breast, I see they cook for like 2-2:30 hours. Is the one cooked for 6 hours to get the texture of deli meat vs like one u may make for thanksgiving dinner?

    5:12 Hey Kristen, great video. Just so you know, that white stuff that you washed off is the fat. So you actually can cook it a little less time so that doesn’t happen. I know you stated your meat is juicy but if you don’t cook all that fat out, it would be more juicier. I’m a chef & I just wanted you to know. But THANK YOU SO MUCH for the awesome video.

    Kristin, I have the meat slicer but no sous-vide. How else could I do this? I have crock-pot, air fryer, instant pot, gas oven and toaster oven. I go to pick up my turkey breast on Saturday.

      Does your instant pot have a sous vide function? If not the other option is to sear the outside and then wrap it really tightly with some parchment paper and roast it. It won't be as juicy as a sous vide but it will be tasty! Make sure you let it cool all the way through before slicing, I usually keep it in the refrigerator overnight and slice the next day

    You can also btw sousvide without a expensive circulator but in a instant pot..
    (one with a sousvide function that is...
    Most are fairly good nowdays fairly accurate and keep the water temperature well)

      Hi 👋 thank you! No, just salted it before we put it in the bag. There's no need to brine it before you put it in the bag if you salt it, salt is the only thing that can penetrate meat. Everything else is just surface treatment 😊

    I can’t have any processed food anymore because of health .and lunch meat has a lot of salt can I make my own lunchmeat like you guys do without adding salt to it? Or it has the house sold in it?

      You can do it with less or no salt if you like. But if you can have a little then definitely add it because it makes a big difference in taste 💕

      There is a product called No Salt, made with Potassium Chloride. It tastes salty without the sodium, plus boosts your potassium intake.

    Is this considered healthy and good for weight loss or is it still considered “processed meat”? I miss subway sandwiches but they’re so high in calories, sodium, etc that I want to look into making my own with my own low calorie bread as well.

      Hi Jimmy, yes this is very healthy. Processed meat has lots of preservatives, sugars and other additives, we don't add anything like that here 💕

      @@KingKenTM remove the skin and you’ll be golden. And don’t use mayo if you’re worried about calories. Look up mayo alternatives made of Greek yogurt on RUclips or ranch sauce from Greek yogurt and many more they’re very good.
      Real mayo is all oil and egg emulsified so it’s extremely fattening Although you may have it if you can control how much you put on. I rather just sauce up my sandwiches with the Greek yogurt alternatives. Maybe low fat cottage cheese added for creaminess.
      With sauce alternatives you can eat more sandwich per calories than with those fattening sauces.
      I lost weight looking at alternatives that are low or no fat and some sacrifices. I don’t eat regular mayo anymore it’s not even that tasty compared to the sauces I mentioned.
