The original style especially looks just like a standard Nagoya Tebasaki (tebasaki basically means wings in Japanese). Potato starch is used for this style generally.
It's not honestly even close. You are by far my favorite youtube channel. Not only are you extremely positive and charismatic as a person and on camera, but your content is just next level. Honestly, every time I watch your videos, I'm just shocked that you don't have millions of subscribers and views on every video because your content is literally so god dang professional and just so entertaining. You gotta try Shakers Public House in Columbus, OH. They recently had a really bad kitchen fire not too long ago, so dine in is closed but they are still in operation as a remote kitchen. It's a great story of the community rallying around a great local business after a horrible accident, but they also have some of the absolute best wings in the state.

There’s a small brewpub in Mobile, Alabama, that has the hottest wings I’ve ever had. It’s called Iron Hand. The owner is real top notch guy and he grows his own peppers. The house made reaper sauce is absolutely brutal.

I wanted to see you Delaware wings after you mentioned them, but didn't really know where to look. That brings up the point that I haven't watched your other wing videos, mostly because they seem kinda longform which can be great, but if I just wanted to watch a specific state's wing spot I would be lost. I would say maybe calling it "I tried the best wings in every state [Part 3: Florida, Georgia, South Carolina, North Carolina] with chapters in the video player, I would find the video much more attractive and easy to watch.
Corner Pocket Pub in Fort Wayne, IN has some spectacular wings. Be sure to get them Double Dipped if you make it there! Fire is my favorite but their most popular sauce it probably the hot honey garlic.

Love this series! Once you make it to California, you have got to try the wings at San Tung in San Francisco.They’re known for their Original Dry fried chicken wings. As well as the wings from Hot Sauce and Panko. They have a bunch of different flavors but my favorite are Chris’ wings flavor and the salt and pepper flavor. Hope to see you going there !

I know that when you get to Illinois the representative is more than likely going to be a place in Chicago (there’s great places there!) but if you get the chance while driving you should definitely try 17th Street Barbecue in Murphysboro or Marion. Best wings I’ve ever had
The Parrots Cay in Grand Forks, ND will be great! Id try the original sauce at level 15. "Shark" sauce if you try a second sauce. Remember to ask for them crispy.

For Domu, its very likely if they're taking inspiration from Korean and Japanese fried chicken, they're probably using potatoes starch
That or i worked at a thai/korean chicken place and we used a rice flower dredge that was gluten free
