You don’t need to dunk it in water. That’s why a lot of them were soggy. The sugar doesn’t make a waterproof seal.
I was wondering what his reasoning for that was? Just to cool and harden it faster? It will harden on its own as it cools naturally. I make hard candy every year around Christmas. I make peppermint Candy Canes, and a half Root Beer, half Vanilla hard candy I call, Root Beer Float. Its pretty tasty!
@@keithyinger3326 Because they probably were making and trying them at the same time I'd assume.
The fried foods are kind of a weird one, because the heat from the sugar will cause it to become soggy anyway. The fruit and cheese should of definitely just air dried.
Edit: Also to note, the flash cooling of the sugar causes the candy to become SUPER tacky and difficult to eat, science at work.

try using the sugars at "softball stage" and let things cool naturally.Think of it as a consitancy between a glaze andsoftcandy. Especially with the beef. Make your softball coatingwith atouch of brandy
That's what I was thinking he should have been doing...dunking it in water while quick & easy, isn't actually that great for when the coating is incomplete.

Then there's the American Barbeque Sauces...
As well as a others... there's actually a lot of "sweet" sauces... even tomato based ones...I know because I have an odd salivary reaction to anything that tastes sweet...and it actually led to me losing 35 pounds freshman year of college as I didn't know what the problem was at first.

the sugared bacon is actually something we do at christmas at my house. Bacon or sliced pork, put brown sugar and cinnamon(less or more based on taste) on top and into the oven until done
Have done the same thing in a smoker. Oh so good!

Re-do the soggy ones and let it cool down normally on a silpat. (The water is also what made it too chewy as well). I have done many MANY experiments with candy making and lbs of sugar wasted.

@@crayder1100 It was more, "I want see if I can do this.....now it's not usable by any means" type thing. I actually disagree with food waste. I save all the scraps I can from organic stuff and use it as compost for my garden. I grow as much my own food I can so I can save money as well.

I like this format. You do the cooking and explaining and the guests do the reviews. Seems more unbiased that way since they don't know anything about how it's made.
OK, let's get into the spirit of things. Other stuff to try:
* candied apples dipped in wagyu fat
* bacon cheesecake
* ground brisket/caramel sliders
* smoked pork loin with milk chocolate sauce
* candied buffalo wings
* bone marrow cinnamon rolls

Who thinks Guga should do a part two but instead of dipping everything in an ice bath after, letting everything just cool naturally. I feel like that would help with a lot of the things that were soggy or chewy.
I’ve candy coated a LOT of things (fruit, cookies, bacon, popcorn, etc…) and never used this water method. I’ve also never ad the soggy problem.
I mean, I've never seen someone dropping candy coated foods into water. Idk where guga learn that
I’d suggest making all these again just without using water. Just let them sit out and cool naturally. Also, since it’s just hard sugar coating items, pork would do well with it, or should at least.

This reminds me of something I randomly made in college that was surprisingly good it was with chicken. But it was a mess of a marinade kinda.
Took a whole bottle of zesty Italian dressing and poured brown sugar into it until it stopped dissolving in the dressing then added Curry powder Cayenne powder small amount on cinnamon and Chinese 5 spice and pinch of cumin.
When I cooked it up later it had a weird candy coating to it. It was a weird sweet heat and spicy kick that faded to sweet still one of my oddest but good taste. Can't remember if it fat free zesty or not

For the ones that get soggy try using dry ice or liquid nitrogen to cool it quickly instead of ice water
Cover the steak in a candy shell and dry age it.

Just fyi so things don't get soggy. In Germany we candy grapes, apples and other fruit but instead of dumping them in icewater we lay them on a bed of sugar and wait so the candy doesn't stick to anything. This makes the candy always crunchy and the candied stuff doesn't get soggy

This is actually a really common snack, you should use a cool cold marble plate to cool it. So it will not go soft and crispy all the way.

A technique I use is instead of ice water put them on a cooling rack in the freezer. Prevents soggy

I haven't tried candied meat except for candied bacon which I LOVE. I'll bet candied pork belly would be awesome too. Sweetness seems to go really well with pork. ie glazed ham

This the ONE episode I am glad I wasn't sitting at the tasting table! (I really don't have a sweet tooth, although I really like maple syrup candied bacon!) LOL
I make candied bacon by putting the strips on a sheet of parchment, covering it with brown sugar and maple syrup, and baking it at a low heat (maybe 250c) until it goes dark brown :9

Popcorn, Bacon, Most Meats would go great dipped in sugar. Darken the sugar. For meats, you need acidic balance... ie apple cider vinegar
