I absolutely love fried plantains. I first had them as a child when my dad got stationed in Central America Panama. Our maid made them for us and we lived them.

There are several varieties of plantain, one of them that we used to have in East Africa was larger than a sweet chiquita banana and was yellow and another was red. They tasted so delicious when fried.

Looks delectable and tasty. Loved Kelewele during my youth growing up in Monrovia; we slanged it "Mammie put the pepper". The fried peanuts is new to me, will definitely try it. That looks scrumptious. Cornstarch in meat pie dough,could you please say why you added it. Thanks for sharing this recipe.
Cornstarch thickens and makes the filling moist and not clamped and chewy. You can use flour if you don’t have cornstarch/cornflour
