In America, especially in or near big cities, people have no life. All they know is work and work, and more money to earn, and more bills to pay, and more stuff to buy... In Europe, people know there is life after work.

You do not know Spain. Here we work a lot, but we separate family life and leisure. Food, climate and languages change throughout Spain, north, center, east, west and south. Galicia has the longest life expectancy after Japan in the whole world. Other communities do not go far. The food is not comparable to that of the USA. Here it is based on fresh quality product, and all over the north we try to alter it as little as possible when cooking. If something is good you do not need to disguise it, which is what you do. It does not go much slower, the account takes 10 minutes because here the waiters charge a salary and are insured, for their pension and medical care. In your country they live on tips and they constantly bother you. We like to enjoy the food quietly, without being constantly bothered by the waiter, and unless you bring the bill before you finish to leave us. And at the end of the meal we continue at the table chatting with a coffee. You pay for a service to enjoy, not just to feed yourself, and we escape from junk food, which only those who do not have time to cook eat. That is why it closes everything at noon, not for napping but to make eating and eating with family, and if it gives time, maybe a nap (only 13% of Spaniards sleep).
That realixing way of life is more common in Seville, the city you guys are talking about. If you have lived in Madrid or other Spanish cities you woldn´t have the same opinion.

In general she's speaking more about the lifestyle in Andalucía than in the rest of Spain. To generalize is not usually too recommendable. It would be better to be more precise and say you're speaking about Andalucía in particular.
Andalucia is definitely different from the rest of Spain, and Australia is more like the US (compared to Spain). Personally I prefer Spain, but maybe you can try out another country as well, Italy for instance? Good luck!
People think that spanish lifestyle is just like in the South of Spain (Sevilla) such as always relaxing, not working, siesta, lazy... And is not actually true. I am from Barcelona and I can assure we work the same as other european countries, people almost don't do siesta and we are responsible and hardworking. A part from this, we also enjoy our lives and we party like southern spaniards so, we are proactive and also we know how to enjoy life. Moreover, catalan mindset is also different

I've never been in Mexico but I'm from Spain, I'm not from Sevilla but I'm from Mallorca, in the Mediterranean Sea, and Sevilla is very different than Palma (Mallorca's capital), so you can imagine how different must be Spain as a entire country than Mexico.
