    Hello!!! My logixcversion is 10.7.2. My logic have not that short cuts, Ctl+option+command+V or X, so I tried to do as your video. Set Midi Channel Voice number and then Separate. I have two results. One is that my menu "Seperate Mid channel" disappeared. Two is that my string track is still one. I don't know what is wrong.
