Yes you can. This grill is very versatile. I have other videos where I cook burgers. Some on the grill and one video where I use a griddle on the grates. Have fun my friend.
Hey Greg, how come you didn't use the probes? I see that the system has the ability to probe the meat and get the temps on the fly without opening the lid.
I find with ribs, positioning the probe in the right position without the influence of the bone can be a challenge. I know approximately how long the cook will take, and I only check on the hour after the first four hours. This cook I was dealing with uneven meat and I wasn't sure how much pull back I was going to get. I do use the probes on roasts or chicken. I hope that helps Terrance.

I am awaiting to receive my SL 1000 from Costco and can not wait to do some of your recipes. How much pellet did you use for that cook?
I believe I used about 10 pounds from a 30 pound bag.
