    I've had many interesting comments on the effect and problem of denting. So let me have a quick chat here. The problem of denting is something that long time veteran cookiers are still mystified by. Blame it on the sugar. Sugar can me temperamental, water loving, altered by weather, and sometimes, just doesn't like to cooperate no matter what you do. Sugar artists in various fields, no matter what there experience, can attest to this. Little bugger that sugar.....
    I've asked many many many of my colleagues and done tons of experimentation and research on this phenomenon over the last 3+ years. In some cases (like these flower petals) I actually like it, because it adds dimension where needed. In other cases (like my friend who was decorating hundreds of skeleton teeth...that ALL DENTED), not so much. I guess, if you want to look at it as an optimist, it can be a pain or a pleasure.
    I went back over my researches and found an article written by one of the most esteemed veteran cookie decorators, Sweetopia, and advised by the highly published Julia Usher. This will hopefully clarify the mystery as best as these two wonderfully talented ladies can.

    sigh So, until a universal no fail method is found, it's just one of those things you have to work with. But don't worry. It actually doesn't happen too often. Me, I'm just not going to sweat it. :)
