Because he couldn't, he knows wolverine is right about him and nothing he says is going to make the pain go away, hence the reason why he punched him, because it's the only other thing he knows.

I love the contrast between this fight scene and the one they had in the desert. First fight took place in an open space, Deadpool very obviously had the upperhand and he was basically toying with Wolverine with his katanas and knives while Wolverine struggled to land any significant damage to Deadpool. But in this car fight, the environment is uncomfortably claustrophobic, and we can see that Wolverine now has the advantage and is now maiming Deadpool, at 3:22 Deadpool recognised that his swords were of no practical use in a confined space like this and swapped to a spiked knuckleduster.
sucks for Wade because wolverine cannot be disarmed and he has probably the best close quarters weapon in history haha. Wade simply can't do anything inside the Odyssey

I'm absolutely loving rewatching this and seeing all the details I missed in theaters. • Logans metal knuckle things scrape the blood off his claws when he retracts them • Logans silly little snort laugh before getting punched and the offended face after • Deadpool trying multiple times to grab/use his katanas before throwing them away for knifes because, yeah, it's hard to swing those things in a car •Deadpools tiny knives have his logo on them to match his katanas •Deadpool trying to choke Logan, Logan faltering for a good second before remembering he has KNIFE HANDS and cuts himself loose This scene is probably my favorite outside of the Deadpool army fight. So much happens in less than 2 minutes of fighting. 😍

Having been alive hundreds of years and fought in several full scale wars on top of his special training, he's developed his own style of fighting that rivals top tier Marvel martial artists like Captain America. In friendly duels, even people like Captain America, Iron Fist, and freaking Spider-Man are extremely wary and have full possibilities of winning and losing. In all out fights he loses out a lot because when his animal side is doing most of the fighting he can't bring up his skills effectively
Actually they don't get tired like normal people, and they aren't immortal. Their healing factors slow down the aging process along with delaying lactic acid build-up, meaning they can fight for hours before getting tired, hence the nighttime transition. The reason they got tired is because they're superhuman, the injuries they can inflict on eachother are substantially greater than what even a highly trained, highly continued human can inflict. Sorry for the long-winded nerd rant 🤣

A cool detail in the fight - at 3:07 you can see that Wolverine ran right at Deadpool but decided to slam into the bumper instead - tripping the airbag, which stunned Deadpool long enough for Wolverine to lunge right at him claws first. Even though they both know they can't kill each other, Wolverine still wanted to have the upper hand in the fight by stunning him long enough to get a few good hits in.
