    lol, at the cheffy sprinkling from on high, didn't Marco P-W say that was theatre? also, us home cooks don't like to waste our precious, fancy salt flakes by sprinkling half of it onto the board. ;) but thanks for the filleting lesson. i just got gifted some dart by the neighbour and even though my mum taught me to fillet a fish years ago, i've never actually done it. Cut to me teaching my daughter to fillet a fish, after a few sneaky youtube lessons....

    When I was young growing up in Hawaii we would catch these fish all the time. We call them "papio" or "o'milu." They are very tasty and definitely an underrated fish. I prefer to grill most fish I catch whole so that way you don't waste any meat. The bones are kind of s hassle but worth it for the taste. One time my dad did filet a trevally and he put the filets right on the grill with salt, pepper and lemon juice. It's a delicate fish but it held together alright and it was delicious!

      a fancier version of dart, which is what we call this in Queensland. and i grew up eating this caught wild my whole life. i say: sssshhhhhh, let's not let it go mainstream.

    adyq. It's not wasteful. Nothing is wasted. The blood line pieces are used for baits. Don't throw away the tails, skins, heads and the rest, mix them with water, it will make great fertilizer for your vegetable garden. 🐟🌶🍆🍉

    You can tell this fish has been on ice for a while. I don't put fish on ice, I put them in a cooler with saltwater and keep them alive until I need to lean them.

    Fresh Trevally is perfect to eat it as sashimi. TBH I think this way is over complicated, used to many ingredients, and the butter and herbs obscure the flavor of fish itself. butter looks overcooked btw...
    Last time I caught a trevally, I used meat made sashimi and sushi, and use bone and head make fish soup, don't waste any part of it.

      Rex Cao yes it’s true they make wonderful sashimi this a classical dish served with a nut brown butter. That’s what give this dish a unique flavour. We appreciate your comments.     California true value Pacific trevally are the best burritos little bit of yellow rice trevally beans onions garlic olives and cheese lots of cheese with the drallon usually I take a boil it or steam it with some Old Bay with a regular little time you know Italian parsley and roll it up in a burrito shell with lots of sharp cheese boiled or the poor man's lobster true value

    Too much other stuff .What about the trevalley. Me and my boys bagged out on trevalley.thats about 55 twenty to twenty five centermeter fish.fillet them get the rib bones out and cut a v in tail to remove hard Calais. Keep skin on .dip am in batter and deep fry until golden.serve up in bowl with just a touch o salt.ohhh yea beatiful thel curl a little but that skin is beatiful. And when you got 100.yes a 100 cos each fish got two fillets you can taste the real deal without all the other stuff!!!!!!!

    Na beer 🍺 pan cake mix salt pepper red pepper cayenne pepper black pepper white pepper mix beer good beer batter it's fried up with steak fries or onion rings lots and lots of onion rings and a good hush puppy Love My hush puppies jack crevalle all the way up to a valley all the way up to the skip Jack all the way up to cantina I love it fried up you need to make tuna balls with the Jack or trevally Pacific trolley dried up on lots of onions and garlic

      Thats a bit rough it is a filleting segment, yes there is waste when filleting small fish like these, small fish like this are much better cooked whole as there is no waste at all.

    Wow! I filleted my trevally and what a waste. 4 tiny fillets once I skinned and removed the boney area right down the middle. I am a chef and I will not be buying this fish again. Sea bream or sea bass for me.

      Yes eat as a whole fish is best for Trevally unless its a larger one.
