Best Skordalia - Greek Garlic Sauce/Dip

  • Skorthalia/skordalia is a very piquant dip/sauce redolent of fresh raw garlic, vinegar or lemon juice and extra virgin olive oil. It is a perfect accompaniment to grilled or fried fish but it is not limited to this. If you love garlic with a bit of a kick, this is for you.

    exactly how my mother made it as well, how good is it with bacaliaro. Fond memories with the good old days, thanx agori

    This is great. You don’t need to apologise for the colour 🥰😍 Mum put it with boiled beetroot and the leaves made like Horta with lemon and olive oil- thanks so much

      Hi Desley! Thank you for the kind words! Yes, my parents loved this with fried fish and horta... a standard during spring when the horta are plentiful. Too bad I never acquired the taste for horta... only my brother of the 3 kids liked them... but I do love skordalia...

    Do you know how long this would keep in the refrigerator? Or can it go in the freezer to last longer?

      Hi there eunha521 and thank you for the comment. I can say it is good in the fridge for at least a month, as I know I have had some in my fridge that long. As to freezing, I am not sure, as neither mom nor I have ever frozen it. I don't think it would split in the freezer, but I cannot guarantee it. I would suggest you just make a smaller batch more often... (grin)

      @@MomsGreekKitchen great! Thanks so much for the information! I bought a Greek cookbook a while back at a Greek festival and was perusing through the recipes today. This one caught my eye as I was so confused why there would be bread in a garlic dip so I had to come searching RUclips. So happy I stumbled across your page! I love love Greek food so I'm definitely excited to try as many recipes as I can!

      @@eunha521 well, I am very glad you stumbled on my little tribute channel... and there will be lots more recipes to come... I took some time off due to having to have an appendectomy and then the holidays...so stay tuned.
      Yes, the bread in some of the dips is unusual, but they are a great way to use up stale bread and make for a great texture in the dips. Some people use boiled potato instead of the bread, but I prefer the bread texture. Skordalia and taramosalata are the two dips mom always made with the bread base.... thanks again for your enthusiasm and the comments... (grin) Take care!!
