Excellent question! Historically the models B3 and C3 would be considered the "most common" models found in both church and funeral homes. These both require and external speaker. I think the reason both these models are used is that most organists will be comfortable with each. Plus there is the affordability factor with high value provided by these models. An A-100 model with external Leslie may be also a model to consider since it was made using the same internal parts as a B3 plus has internal speakers. Keep in mind that though the A-100's have internal speakers the tone is not nearly as rich as this same model with a proper Leslie speaker.
There are videos that go into great detail but the number one tip I can suggest is to use a wind screen and stay as far away from the motors as possible. The moving parts inside the Leslie, when at fast speed, can create a bit of "wind" which can transmit as noise but only on fast speed. It can be difficult to trace if you are now aware of the cause
As a Technics owner I have to ask why? When I bought my 1984 Technics it was standing next to a Hammond in the shop and I seriously thought the price tags had been switched: The Hammond was five times as expensive as the Technics, but the Technics could do five times as much as the Hammond - probably more actually. To me a Hammond just seems so..... limited.
The B-200 is smaller with one octave of bass pedals and more portable. The B-3000 is more the size and has the features of a B3 but is not a tone wheel organ. Some people like the B-3000 due to it is a ligher weight instrument and has build in transpose feature
