Garden coir comes from coconut, coir is the spongy pieces inside coconut fiber, I have made coir, what you have there is palm fiber, that material makes good tinder.
I use a very sandy soil and straw to make a cobb-like mortar for my natural rock walls. Its not great but better than nothing. We have zero clay here so have to make do.
I hear you....i bet it's hard to get it to stick. I did manage to put this cob mix onto a wall but it just wanted to fall off...I hope I can find a lot of clay but I am in Mexico near the ocean.
