They did have ethereal and intangible true forms (Zeus is known for transforming into light, Apollo could become shimmering sparkles, etc), but they need physical human-like forms to properly interact with the world, including powerful enemies like the Titans and their monster allies.
In mythology Hera gave all of Zeus' sons rough times. She even gave Aeneas, the ancestor of Rome, a rough time. Hera, Zeus, and Poseidon inherited Cronus' nasty temper.

Mutants, the monster couple in the Biker Mice From Mars episode, Zordrak in The Dreamstone and Fantasia's Chernabog (he can talk in House Of Mouse, at least), talking kaiju's always seem to be villains except for in Digimon!
