Mixing our favorite sourdough pizza dough

  • Here’s the process of how I mix up our (current) favorite sourdough pizza formula. I shot this simply and straightforward to make the process as clear as possible.
    Dough Formula:
    320-330g water, divided
    100g active sourdough starter
    50g whole wheat flour
    450g bread flour (all-purpose flour is okay, just stick to lower range of water amount)
    10g sea salt
    Makes 3 medium pizzas

    550g flour (100%) & 80g Sourdough Starter (15%), PSA for those working off of percentages.

    I just made my first sourdough pizza! 54 hrs in the fridge and 2 hrs in room temp. before making the pizza. Best pizza ever!
