    Hey dooby, Taiwanese here! That yellow vegetable you’re eating at 40:37 is the flower 金針花 or day lily in English. The direct translation is golden needle flower. It’s a super common ingredient for soups, and fun fact, it’s the flower of the mother in Taiwan! Though, in Mother’s Day, we still usually give coronations.

    紅燒does not mean it has chili oil in the recipe, in context of the beef noodle soup - hong shao simply means braised with soy sauce, which is the base of the bowl of beef soup. The tomato notes are also there because there is likely tomatoes in the broth - a common ingredient in red braised beef noodle soup to bring sweetness and natural acidity (:

      you forgot to add that 红烧 not only uses soy sauce but also sugar and other essential condiments. it is more complex than just using soy sauce 😮😮😮

      @@musicjunk1000 It uses spices, primarily star anise and cinnamon. As well as soybean paste and chinese chili paste. Sometimes sichuan peppercorns too. It's complex to get the flavors correctly.

    I dont see many comments abt this but i love the music choices for the videos esp those from the recent uploads! Also love that the videos are getting so much better, not saying they are bad before but the video quality, the shots, and editing has really upgraded! I love watching food videos in general but dooby’s has good info about the food and the place 🫶🏼

    40:32 that yellow flower is 金針花, daylily flower, you can see lots of it at 六十石山 (Liushishi Mountain), and also 赤科山 (Zhike Mountain). Their harvest season is around this time of year, so if you go there you will see yellow mountains.

      I think there may be more than one answer.
      Because Taiwan's population density is very high, ranking among the top six in the world, it is almost impossible to have a small population.
      But it is indeed a city with relatively few people, but whether it is fun or not is a matter of opinion. Of course, the more people there are, the more delicious food there is.
      I suggest that it is better to come to Taiwan from March to April, or from September to November. It will not be very hot or rainy all the time, and the weather will be more pleasant.

    this series is the best among all the videos about taiwan I've seen as a taiwanese
    even better than quite a lot of those made by taiwanese
    2:41 the mandarin says 炸鮮奶 which means fried milk
    16:26 the characters should be 大腸包小腸 instead of 大勝包水腸
    32:50 the characters should be 蟹殼黃 instead of 蟹設蟹
    38:54 the mandarin is still the rice noodle one

    The yellow vegetable in the soup is actually a flower called 金針花, or daylily. It’s often cooked in soups.

    As a Taiwanese American, I'm biased, but Taiwan is just a little jewel of a place. The food is fantastic and has influences from various regions of China as well as Japan. And it's so inexpensive. You're right that many people don't cook all that often at home, as it's just as inexpensive to eat out or get takeout. The people are friendly and so helpful to visitors. And many if not most Taiwanese folks can understand or speak at least a little bit of English, as it's taught in all schools as a second language. Many are quite proficient. It's also a super safe and efficient place and has one of the best and most efficient single-payer universal health care systems in the world. My family has had first hand experience with it.

    that's the theme of Joshua Weisman's book. texture over flavor! just wanted to add, I was at a traditional chinese wedding dinner and the restaurant had the steamed fish dish served with the hot oil poured over same herbal veggie toppings. the fish wasn't fishy at all. and super tender and juicy. steaming then pour over oil is so under rated

You pretty nailed it in emersing yourself to the culture and eating locally but I must correct a few things you mentioned that's just me: 1) most of the housing are equipped with a kitchen unless it's one of the additions or studios with no kitchens for ppl with budgets or ...but yes you don't need to cook in TW. 2) on the translation for the chicken cutlets, it's pretty much the literally/direct translation Gi Pai means Chicken Cutlet or Chicken Steak not thin chicken😅. Nonetheless You did great job on the commentaries.
