I don't know what McLaren changed with their latest V8's (firing order or exhaust manifolds), but I prefer the 12C's or P1's exhaust note to the newer ones. They sound too 4 cylinder-y. Gotta love the flames tho!

I have been thinking the exact same thing. Love their cars, absolutely, however the exhaust is very "calm" minus the flames and pops if that makes since.

Same opinion here, this sounds much more like If a 458 had turbos on It whilst the P1, the 650S & the MP4-12C got that ooooOoOoOoOOOO acceleration noise which sounds like a NASCAR V8.
Ok so whilst typing this comment I searched for an old MP4-12C exhaust video from 7 years ago and I'm not gonna bother reexplaining here's the comment:
"I love how these McLaren V8s sound. They are indeed flat plane V8s but the reason why they sound more crossplane (like your typical American V8) is because the turbo manifolds they use are unequal length headers and the pulse pressures are not spread out evenly to the turbo, hence the difference in sound that most Flat plane V8s make. Ford uses this same trick with their header design on their GT350, which is why that engine has more of a V8 rumble. The 675LT and the 570s use different turbo manifolds than the 12c/650s that are of equal length, which is why they sound more like a flat plane V8." - RUclips User
So basically:
P1, MP4-12C, 650S = Cool NASCAR alike V8 sound
675LT, 570S, 540C, 600LT, 620R, 720S, 765LT = Not such a cool sound
I guess technically you could make the newer models sound like that by swapping the turbo manifolds or making the existing ones unequal length (If that's doable).
Also the old turbo manifolds are apparently the ones from a Subaru WRX STi

Yeah I kinda did some digging too and found that the newer McLaren as you say have equal length exhaust manifolds and twin-scroll turbochargers.
Kinda what Subaru did with the newer WRX, it lost the boxer rumble going with EL headers, but gains better response.
I watched some videos of a 600LT, 720S and 765LT with Novitec exhaust and I kinda hear some resemblance to the Ferrari 458 with Novitec (go figure lol) or Tubi exhaust

You are right that these later McLaren's with equal length manifolds do sound VERY 4 cylinder-ish with the stock exhaust. Add a custom X pipe exhaust and it gets this windy turbo V8 howl.. much better. (X pipe is also how Novitec makes these McLaren's like 570S sound better) but I also prefer the growling sound of the older models. They sound INSANE with high flow cats👌like a beast.

I V8 McLaren secondo me sono anche superiori a quelli Ferrari. Sono incredibili il sound, erogazione, potenze raggiungibili, tutto insomma. E senza considerare le massime evoluzioni come quello della Senna per esempio. Che può raggiungere i 1000 cv con mappa e scarico. Incredibile.

Those sparks don’t look healthy… the smoke is probably due to a bit of oil on the engine or manifolds and happens sometimes when taking off exhaust components or working on the engine
