If starting out with cheese, try a simple quest fresco that can be modified with many different flavors. Heat 1 gallon of your milk to 180 degrees (yes, you need a very accurate thermometer). Turn off the heat, and add 3/4 cup white vinegar slowly while gently mixing. The milk will start to separate. Cover the pot and leave it for 20 minutes. Pour through a strainer to separate the curds and whey. You can feed the whey to your animals. Strain out as much whey as possible. Put the cheese into a bowl and add 1 1/2 teaspoons pink salt and the juice of 1 lime. Mix thoroughly. If you want a flavored cheese, add chives, scallions, oregano, basil, thyme, or any other flavors you like. Place the cheese in a small container with a lid and leave cheese n the fridge for 24 hours. Enjoy!,
