WILD TURKEY RECIPE - Nashville Hot Turkey Tenders- The BEST thing I have EVER made out of a Turkey!

  • Nashville hot chicken has gained a lot of popularity over the last few years, and rightfully so. It's simple to make and it is just plain delicious. It's as simple as frying chicken and then dunking it in a vat of spiced oil. There are a few ways to do it. One involves the aforementioned "hot oil technique" while the other is comprised of oil and lard. Yes I said lard. How can this not taste good? Don't let the name scare you. You can adjust the heat of this dish to your liking by modifying the cayenne in your spice mixture. So I decided to give it a try on an old eastern Wisconsin Tom gobbler and the results were amazing. I'm not lying when I say it was one of the best things I have made in some time, especially when it comes to wild turkey. As I said before, this is very simple to do, and I hope you give it a try. Use chicken if you want, or you can be cool and use some wild game. The choice is yours! Enjoy!
    Ingredients List
    Marinade:
    4 wild turkey tenders or sliced breast meat
    1 cup buttermilk
    1 egg
    1/4 cup pickle brine
    2 Tbs hot sauce
    Flour mixture:
    2 cups all purpose flour
    2 teaspoons fine table salt or 4 teaspoons kosher salt
    Spicy oil:
    Lard version:
    1/4 cup lard
    1/4 cup butter
    3 Tbs cayenne (adjust to your heat liking, I've seen ranges from 1-6 Tbs)
    1 Tbs brown sugar
    1 teaspoon smoked paprika
    1/2 teaspoon garlic powder
    1/2 teaspoon kosher salt
    1/2 teaspoon freshly cracked black pepper
    Oil Version:
    1 cup hot oil from your frying process
    3-4 Tbs cayenne
    2 Tbs brown sugar
    1 Tbs garlic powder
    1 Tbs smoked paprika
    2 tsp kosher salt, 1 tsp pepper

    I had thought that ground Turkey breast on the grill were the ONLY way to eat wild Turks. I do believe I will be proven wrong when I try this. Thanks jesse and Gods speed to all wild turkeys still alive you now have another reason to humans to chase you
