Cool build, thanks! I'd go Monk 18 / Fighter 2. This way, you'd get Empty Body which is huge. And Action Surge would let you trigger Quivering Palm in one turn.

How about "proficient defense" where you can add your proficiency bonus to armor class for monk alone
