Instant Pot Greek Chicken Stew (kapama)

Ingredients
6 chicken leg quarters or a whole chicken cut into pieces
1/4 cup (60ml) olive oil
1 onion, finely chopped
4 garlic cloves, grated
salt, to taste
freshly ground black pepper, to taste
1 bay leaf
1 cinnamon stick
28 ounces crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes (optional)
1 cup water
2-4 tablespoons fresh chopped parsley
serve with: feta, olives, salad
Instructions
Season the chicken on both sides with salt and black pepper.
Set the Instant Pot to the Saute setting.
Add the oil and let it heat up.
Brown the chicken in 2-3 batches about 4 minutes per side. Remove from the pan and set aside.
Add the onion to the pot and saute until soft and golden. About 10 minutes. Add the garlic and warm through for a few seconds.
Return the chicken to the pot. Add the tomatoes, bay leaf, salt, pepper, crushed red pepper flakes, cinnamon, and a cup of water. Mix and secure the lid.
Set the valve to lock.
Pressure Cook on high for 10 minutes and allow the pressure to naturally release for 10 minutes.
Open the valve to release any remaining pressure.
Taste and adjust the seasoning of needed.
Add the oregano and parsley and serve over rice, pasta, or with roasted potatoes. Also serve with feta and olives.

I do this with lamb shanks and add carrots and celery, but skip the oregano. I deglaze the pot with red wine and rinse the tomato can with chicken broth. I normally do this in on the stove top or braise in the oven, but tried it 2 weeks ago in the Instant Pot and came out really tasty.

Made this again tonight and made a mini change resulting in the most amazing Chicken stew! I added a can (14.5 oz) of chicken broth in place of the water. While IP was cooking, I soaked 3/4 c white rice (Jasmine, but Basmati would work as well) in water for 20 minutes and then set to drain. After IP was finished, I removed chicken and covered with foil to keep it warm. Added rice to IP, stirred and set IP for 3 minutes. I then followed with a 10 min natural release. I then opened IP, stirred in a # of frozen French cut string beans (which had been sitting on the counter the whole time), stirring until warmed through. I served the result with the chicken on top. It was amazing. Thank you, Dimitra, for your wonderful recipes and inspiration.

Is the chicken supposed to be there when you put in the onions?
It says to add the garlic after the onions, and then "return the chicken to the pot," as you've already browned it and set it aside until the onions/garlic are cooked.
