I find this angle so much better than the standard high-up ITTF one. It's helpful to see the height of the ball. Also thank you for the videos.

Why does ma long try to slam it close to table when his opponent is slamming it too.
He was extremely out of position to defend against a slam in any regular way. If you notice, he actually switched the paddle to his left hand so he had the reach to have a shot at reaching the ball. Basically, it was a last ditch effort to save the point with nothing to lose.
Why is the height of ma long toss different from each serve?

The toss of the serve allows the ball to have more velocity off of the paddle. Less toss height means that there is a decrease in speed, but more spinny of a service. High toss height means that the ball will have more speed but less spin. Combined with the point of contact of the paddle, this gives Ma Long a large variety of spin and speed with the same service.
I think you are correct but why doesnt he toss high all the time?

Yan An should quit playing and Ma Long is like a robot. they are both playing and wasting time.
