    You made them just like I do. I always just turned mine upside down on a towel and skip the water bath though. They always seal just fine that way. Love your blooper ending. So cute.

      Yeah, that's another method you can use. We give a lot of canned goods away to friends and family, so we always make sure to use safe practises. That rooster!! LOL

    Absolutely Delicious!! I just made these pickles. I used 3 lbs of my Japanese Long cucumbers. Ended up with 5 full pints. So as always when canning have extra jars ready. I added 2 sliced serrano peppers and a teaspoon of Red pepper flake. Thank you so much for sharing this Recipe!

    I just subscribed purely on account of the bloopers! 😅 Hi from the UK where canning ( or bottling as we call it) is experiencing a bit of a revival. We have Brexit looming with the added complication of Covid 19, there are going to be food shortages and delays, I think we all need to be canning and prepping!

    Thanks so much for sharing this recipe! I just used it to make my very first pickles ever in my water bath canner. The only differences were that I used white sugar instead of brown sugar because its what I had, I didn't use the celery seed because I also didn't have any, and I used ground versions of all the herbs and spices you used except the black pepper because it was all I had. One last change was that I boiled my water during the water bath processing for 15 minutes instead of 10, as that was what the recommendations were for my altitude for a hot pack. I know many people use less time and there are reasons why this is safe, but as a first time pickler, I just went with the recommendations as well as I could as well as sterilizing everything before use.
    I used the Dragon's Egg cucumbers I picked fresh out of my garden and made a large batch of it! Just checked the cans this morning and they had all sealed firmly with no problems when I checked the seal and took the rings off. I haven't tried the pickles yet, as I am waiting for them to reach peak flavor, but I did have leftover pickles that didn't fit into the canning jars that I simply refrigerated and at the next day, and they were fantastic! Sour, sweet, crunchy, and so very flavorful; so much more so than any pickles I've ever had from the store!

    I made these pickles and ate several before I could get them in the jars. Then I had a small amount that would not fit a jar and they only lasted 24 hrs. I went out and got more cucumbers to make a second batch and did the exact same thing. Not to mention this was my first time ever canning anything!!!! Thank you so much for sharing.

      Wilderstead we do have several things in common, oh yes I need at least 55 jars to last the year, I’m shooting for 65. We’ll see how long it stays warm and the cucumbers keep coming. This time of year we could get a hard frost without any warning. I’ve got my fingers crossed

    My Mom made hers the same way ingredient wise. The only thing different she did was let them sit in the brine overnight, Then during the night I would sneak downstairs and grab a handful and chow down. I loved the taste of the brine and cucumbers.

      My grandma did that sometimes as well. But I do remember her saying that if it’s in the jars for months, it’s the same as sitting in the brine overnight. They are sooo tasty whichever way you choose to make them!

      We don’t heat the jars. Make sure they aren’t super cold though, or they might crack from the heat of the pickles and brine.
      Also - make twice as many as you think you will need. They are highly addictive!

    The History of Bread & Butter Pickles. Around the turn of the century (1900) there was a cucumber farmer in Illinois who was trying to figure out what to do with the cucumbers that no one would buy because they were misshapened. His wife said why don't we make pickles out of them and pulled out her Mother's pickle recipe. They made a batch and took it to the local grocery store and traded the pickles for ... you guessed it ... Bread & Butter ... Hence the name. B&B pickles became the first American food rage. By the end of the 1920s if you did not have B&B pickles on your dinner table you did not have a well-set table. On a fun note, B&B pickles are one of the few true American pickles. Unlike most of our pickles, they never existed in Europe. I don't think there is a "wrong" recipe for B&B pickles. When I started making mine I asked my Mom for the recipe she always used when I was a kid. She sent me that recipe plus all of my Aunt's various recipes. I ended up having to put together a spreadsheet of ingredients and make my B&B pickles out of the most common ingredients PLUS, like Dave's Famous Pickles, I add red serrano peppers from my garden. (I think Dave uses red jalapenos.)

    These look amazing! What's the "crunch" factor on them? I like crunchy pickles.

      If you want crunch at it's finest ,use the freshest cukes and only bring the canner water to 180-185 degrees for 15 minutes, higher altitude adjustments have to be made though. I live at 5500 ft so I have to process in the 180 degree F. for 25 minutes. If it goes lower you have to start timing from the beginning. You can also add 1/8 teas. pickle crisp (calcium chloride) or a bay leaf or grape leaf, as these leaves have tannin that help keep the crispness. The pectin in the pickles starts to break down at over 185 degrees. I use my candy thermometer on my canner to watch the temp. I also don't cook my cucumbers first. I fill the jars with the cukes, etc and fill with hot brine (vinegar, water, sugar and spices). May the sound of crunch be heard! Lol

      @@sherip1270 Ooooooh Thanks for the tip! I knew about the pickle crisp and the leaves, and in fact I've done both techniques recently. I want pickles so CRISPY they bite me! I'll try that temperature trick in conjunction with one of the other methods and see how it goes.

      They’ll last years as long as they seal properly. As for when to eat them, you can crack a jar right away or you can let them sit for a week. We can never wait to open up a jar and start munching away.

    Does adding the cucumber and onion back into the mix while simmering soften them? Can I exclude that step to make sure the pickles have a crunch to them?
