I never add sugar or alum, my beans always turn out really crisp and If anyone likes a good bloody marry, add these beans and a couple tablespoons of brine to the drink. My beans are prolific this year so I need to get back to it. 🦋💜
Have you ever tried Pickle Crisp to preserve crispness? I believe the active ingredient is citric acid. I used pickle Crisp last summer and it was OK, but I really like a crunchy pickle bite. Also, those pickling cucumbers looked beautiful; wished mine looked that good.

I have an important question I was recently told that you cannot use quart jars for dilly beans , and I spent all morning doing that.
That's strange. What is the reason behind not using quarts?
I've canned dilly beans in both quart and pints with no issues.

They are really mild, no heat. They are called a nadapeno pepper.

I take the rings off because I don't have enough rings for all my jars, and if there was a jar that didn't seal properly it would be easier to tell.
