    More than just a dish, Gajbaje Ambat is a tradition. This spicy medley graces every festival feast, its aroma weaving through festive celebrations like Ganesh Chaturthi, Vayana Pooja, and Krishna Janamasthami.
    Imagine a kaleidoscope of colors and textures dancing in a rich, coconutty embrace. That's Gajbaje Ambat! From plump sweet, potatoes and tender yams to vibrant beans and delicious pumpkin, any vegetable of the season can join the party. Grandma expertly selects a rainbow of veggies, ensuring every bite bursts with unique textures and flavors.
    The heart of Gajbaje Ambat lies in its mildly spicy coconut-based masala. Freshly grated coconut lends its creamy richness, while roasted red chillies tantilize the palate. Tamarind adds complexity, and the whole symphony is brought to life in a crackling mustard seed & curry leaves tempering.

    INGREDIENTS:
    1 Kg Seasonal Vegetables
    Salt to taste
    FOR MASALA:
    1/2 Coconut (Grated)
    1 Marble Sized ball of Tamarind
    10 Dried Red Chillies (Roasted)
    TEMPERING:
    1 Tablespoon Coconut Oil
    2 Teaspoon Mustard Seeds
    1 Sprig Curry Leaves
    THICKENING AGENT:
    2 Teaspoon Rice Flour
