I have never had chicken tortilla casserole. Worth a try, simple enough recipe and now I have another option for using up the rest of that rotisserie chicken.
Always so much fun to watch you Mark! That sling is great. I always use foil, but I really like silicone! I do remember King Ranch chicken and how about Chicken spaghetti? LOL. Both have cream of chicken soup in them.
Not a great fan of cream of chicken soup! Except the homemade kind. But the one in casseroles? Um, no. However, my mother made King Ranch Chicken with a modified béchamel (she would NEVER have called it that) because she didn't want to use the soup.
@@CookingWithBruceMark My mother loved anything canned! LOL. I was the personal chef for a famous TV preacher in Ft. Worth in the '80's and she loved both of those casseroles with the canned cream of chicken made in the crockpot. I had to do them both a couple of times a month along with lots of healthier and more delicious foods. The wife grew up in Arkansas and she had a love for both of those.
You mean in the layers? You could add it. Problem is, it's pretty "wet." Salsa tends to be a little thicker and so doesn't make the casserole soggy. I tried this with a half-and-half combo of red enchilada sauce and salsa--and honestly, I didn't think the difference was enough to warrant calling for another ingredient in an already super simple recipe. But feel free to dribble some in for more flavor, if you've got enchilada sauce on hand. I'll also tell you I once dribbled the top with the liquid in a jar of pickled jalapeño rings--and it was quite tasty!
I suppose you could. It would have to be precooked. Maybe ground beef? I have never tried it, I have to confess. But you could give it a whirl. I can't see why it wouldn't work. Or go to the deli counter, get a 1/2-pound/450-gram of roast beef, chop it into fine cubes, and go from there! (Thanks. I feel so weird in those videos. I guess I really let myself go!)

It's super simple. I gave you ways to gussy it up--but you can do more, if you want. Or serve it with sour cream as a garnish. It's super easy!
